A Lighter Night

Dinner tonight was something I have been wanting to make for a while, but just haven’t gotten around to it. It’s another great recipe from fellow blogger, Gina – her Lighter Spinach Frittata! It was delicious. The recipe serves 4, but I cut it into thirds which only came to 4 Points. The only change I made to the recipe was that I used reduced-fat feta since I already had it in the fridge. A great recipe for breakfast, lunch or dinner! I paired it with a salad with some sliced carrots and 2 tsp. evoo and vinegar…

I still have 2 Points left for the day, but the husband and I just got back from the movies and now it’s a bit late for me to eat something. I generally don’t like to eat too close to bedtime. So, I’ll deal with the little growling right now and head off to sleep…

Day Two

I woke up feeling a lot better today, both mentally and physically. Although, my legs are sore as all get out from my run/walk yesterday! I guess that’s a good thing. With one good Point tracking day under my belt, I am ready for day two…

For breakfast, I had a Thomas’ Light English Muffin with PB2. In case you haven’t noticed, a really am a fan of this PB2 stuff!

It was a good 2 Point breakfast, but I had this waiting in the wings…

I had an idea for Apple Cranberry Bread (I am banana and pumpkined out for now!) and I wanted to give it a whirl. It came out really good, so I had to have a piece which was an additional 2 Points…

For lunch, it was split pea soup again. I had a ham wrap and some apple and grapes along with it for a filling 6 Points…

I guess I was missing my chips because I snagged a small handfull of pretzel sticks ( 1 Point) after that. I wasn’t really still hungry, but I needed more “crunch”.
Posting this has made me hungry, so I just ran downstairs to grab another slice of apple cranberry bread for my snack…

It’s pretty hearty since it’s made with whole wheat pastry flour and just a little bit sweet from the apples and cranberries. A nice 2 Point snack.

Well, day two is almost through (hey, I’m a poet) and so far so good. I wanted to share something I read that I think is spot on with respect to what we have all been going through during this holiday eating season. Great, sound advice : check out MizFit’s post on Damage Limitation.

Making It Through

I ended up making it through the day fairly well. Thankfully, the way my body was feeling was a constant reminder to stay on track.

For a snack today, I decided to try one of these bars that I had picked up a while ago…


This bar was actually developed by a weight loss surgeon! The package says to eat a Fullbar with glass of water, 30 minutes before your mealtime and you are supposed to want to eat less and be satisfied at your next meal. Hey, I’m game! The nutritionals were pretty decent for this fairly large bar: 150 cal., 2.5 gr. fat and 5 gr. fiber = 2 Points. Here it is, up close and personal…

This bar was o.k. It was a little chewy and had a strong cinnamon flavor. This bar flavor was supposed to be cranberry almond, but there weren’t many almonds, mainly sunflower seeds. Not sure I would buy these again. Not sure if I could say I wanted to “eat less” at my next meal either, but I didn’t follow the directions exactly since I had this more like 1 1/2 hrs. before my dinner. In any event, it did o.k. as a snack bar.
Dinner tonight was chicken cutlets for the family. I am so glad I found a way to make these so that I can enjoy them, too. My main trick is to “pan fry” my breaded cutlet first in just cooking spray. Then, I fry the rest for the family in olive oil. My breading is the same for all, so it’s just as tasty and a 4 oz. cutlet comes to only 5 Points this way! I also made some roasted cauliflower which I loved and could have eaten the entire batch of. I decided to have the last 2 tbsp. of white bean dip with a few carrots and some New York Style 96% fat free garlic mini bagel chips. It was a filling dinner, all for 10 Points…
I had 2 Points left for dessert and these guys were calling my name…

I used a half serving of them to top my 1/2 c. Breyers Fat Free Double Churned Chocolate Ice Cream

It was yummy and very sugary, which scared me a little, but I seemed to have survived without incident! Yeah, one day down. I made sure to journal/track everything I ate and I even got in a little extra exercise on the trampoline with the daughters. All in all, a day I can feel good about. Hopefully, my body will get the message and I won’t feel so yucky tomorrow!
