A Little Bit Scroogey

Bah, humbug!  I’m trying to be in the spirit.  I really am.  It’s just not happening.  Between the overload of Christmas music that has been playing everywhere non-stop since September and the mountainous list of things I need to accomplish before the actual holiday, I’m scroogeylicious.  How do ya like that word, Janetha B.?!!!  (she comes up with the BEST words!)

Before hitting up the stores, I went on a 3 mile run around my neighborhood.  I was extra slow for some reason.  Just wasn’t feeling it, I guess!  But, I knocked it out and ended with lunges up my giant hill and some random step aerobics on the curb.  Pretty good for not feelin it :)

When I came in, I went right for breakfast.  A yogurt bowl has been my breakfast of choice, lately.  It is satisfying and sticks with me most of the morning.  Today, I went with Chobani plain yogurt, a pinch of NuNaturals NuStevia , strawberries and a couple tablespoons of Pumpkin Spice Granola

I’ve been dying to make the Pumpkin Spice Granola since seeing it on Lauren’s blog.  I made a batch using slivered almonds and dried cherries.  It is delicious!  And addictive!

After a good shower, I was off to tackle some of my Christmas shopping.  It was an EPIC FAIL.  I have no idea what I am getting anyone and spent much time wandering aimlessly.  I just might take some of my own advice and go for gift cards :)

I stopped home for lunch in between stores.  I went with a bowl of Trader Joe’s Organic Lentil Soup and a slice of raisin soda bread with homemade almond butter

I wandered around a few more stores, then picked up the daughters for afterschool activities.  I had a decent plan for dinner tonight, so everything was ready by the time we got home.  I made it an easy taco night but,  I did mine with a little twist.  Since I had some leftover chickpeas in the fridge, I heated and tossed them with some taco seasoning  for Chickpea Tacos!  I ran out of taco shells, so I used a high fiber tortilla cut in half and topped them with the usual suspects :  reduced fat cheese, salsa, lettuce, and guacamole.  Some super sweet pineapple was a great side…

So good!  The taco- seasoned chickpeas will make a great salad topping, too!  I’m thinking taco salad for lunch tomorrow :)

Thank you for all the supportive comments on my last post.  I finally feel comfortable saying (and believing) that I will get to goal one day.  More importantly, I know that I have the tools to stay there!  That is definitely ONE GOOD THING :)

I’m not really feeling the Christmas love this year either. I think we’ll go look at Christmas lights this weekend. Maybe that will help.

I’ll say it again: you look fantastic right now and you’re in great shape. I’d be thrilled to be able to run 3 miles.

Your food looks yummy as always ! And take heart- I have not started any Christmas shopping yet and have no clue what to buy anyone either. And I think there is something in the air- so many of us are in a kind of funk with these healthy living moves of late. I think it will turn around about December 28, when we all get that shot in the arm in the form of New Year New You kind of thinking.

The chickpea tacos are a great idea!!! YUM! I wandered around the stores yesterday-got hungry-came home to eat- then back out again. SO BRAVO for US for coming home to eat a healthy lunch and not give in to the mall foods!!! :)

ooooh scroogeylicious is one for the books!! please tell me you dipped the PB toast in the soup? that is something i live for! PB toast in veggie soup is something i grew up on. girl.. chickpea tacos sound incredible! ive never met a garbanzo i didn’t like nor a taco i didnt like so i have a good feeling about those. one good thing? i got 12.5 hours of sleep last night :)

I wonder how it would taste if you roasted the chickpeas in taco seasoning? Either way – awesome way to get protein in! :D

pumpkin spice granola sounds fantastic!!!

soda bread is my ALL time favorite! I can’t eat it because I will eat the whoel loaf OMG its so good, even thinking about it :)
