Cookie Day For One
Our much anticipated “Cookie Day” tradition was canceled this year due to this…
We got a giant pile of snow totaling about 2 feet in our area! I am not a fan
Due to the road conditions, we were not able to make the trek over to my parents’ house, so I decided to have a Cookie Day for One. I tried to enlist the help of the daughters, but they were not being cooperative at all. Scrooges, I tell ya! So, I got my supplies together and prepared for a day of baking away.
First, I made sure to have a decent breakfast- Kashi Honey Sunshine cereal, unsweetened vanilla Almond Breeze and some dried cherries…
Then, I got to mixin’ and bakin’. First up was some Chewy Gingersnaps…
Next, an attempt at a healthy cookie… Deep Dark Chocolate Biscotti…
Then, some Triple Chocolate Fudge Cookies…
Okay, at this point, you can imagine the amount of cookie dough that has been consumed. For some reason, cookie dough and I were having a love fest and I was completely head –over- heels immersed in it. Total mindless tasting. It was pretty sick. en. ing.
I decided to stop and make myself a nice nourishing bowl of soup. I threw together some pantry staples and made a great pot of Chickpea and Pasta Soup! In the mix…
- 1/2 cup chopped onion
- 2 tbsp. olive oil
- 2 (14 oz.) cans of diced tomatoes
- 2 cups water
- 2 (15 oz.) cans chickpeas
- 1/2 cup diced lean ham
- 2 cups fresh spinach, shredded
- 2 cups Ronzoni Smart Taste elbow macaroni, uncooked
- 1 tsp. italian seasoning
I cooked the onion in the olive oil until translucent, then added the other ingredients and simmered for about 30 minutes.

We also made about 3 dozen sugar cookies which I did not take pics of because I was extremely sick of cookies at this point! The Joy of Baking was gone
I was filled to the brim of sugar and fat, but I forced myself to eat a healthy dinner to combat the junk . I had some Garlic Chili Tilapia from Trader Joe’s waiting in the fridge, so I pan-seared it and served it with a simple salad…
Aaaah, that’s better!
Cookie Day for One was not as fun as Cookie Day with Mom and Gram! I started going stir-crazy halfway through and making up silly words to traditional Christmas songs in an effort to entertain myself. I called my Mom singing one of the songs, to which she joined in with her own words. Here’s a little diddy sung to the tune of “Angels We Have Heard On High”…
Me: Consuming sugar makes me high, sweetly coursing through my veins…
Mom: Has your diet go bye-bye, you’ll be seeing lots of gains…
We’re so weird

I baked about 8 dozen cookies today and consumed at least 5 cookies worth of dough. I’m also baking tomorrow so wish me luck!
I don’t normally bake, and I knew to allow for some cookie tasting in my caloric budget, but I forgot about all the tasting that must occur.

Boy, you guys really got dumped ! I have never made Biscotti, but it is one cookie I am thinking about trying at some later date this year. The triple chocolate cookies and cream peppermint bark looks SOOOOOO tempting ! My saving grace is that unless it is super dark chocolate ( 85 percent cacao or more) it gives me horrible heartburn, so I avoid it.
Holy cannoli, I just went into a complete foodie coma just by looking at all those delicious treats you whipped up!! And that soup-yummm…anything with chick peas in it is getting added to my recipe book.
I was trying to pick my fav of them all to comment on, but that’s a really hard thing to do.

Oh WOW the biscotti look so professional. I love biscotti!!!! As you can tell. Usually, i like having something big for breakfast and cereal doesn’t fill me up so I (like you) end up eating lots of random stuff while i’m baking or cooking in the kitchen.

Marisa – that’s some snowstorm! Normally, here in Chicago we get slammed but not so much this time. Just a few inches over night. I won’t complain after looking at your pics!
I would not be brave enough to make all those cookies! I make pizzelle’s (an italian waffle cookie and LOVE the batter on that one!). that’s the only cookie I make.
