Cookies, Cookies Everywhere
There are cookies EVERYWHERE!!! Let me just say that being trapped in the house (major snowstorm here) with tons of cookies is really testing my intuitive eating attempts! I’m not being quite as successful with it as I had hoped, but I am determined to reel it in today! I have many more batches of tempting cookies to make, but I thought I’d share at least one healthy kind! These are my Banana Walnut Breakfast Cookies that I submitted to Jen’s e-cookbook for charity. Unfortunately, it never made it to the book since it got lost in Jen’s spam folder
I got many requests for the recipe, so I’m glad to be able to share it with you! It’s one cookie you can feel good about starting your day with!
BANANA WALNUT BREAKFAST COOKIE
- 1/2 cup whole wheat pastry flour
- 1/2 cup oat bran
- 1/4 cup old fashioned rolled oats
- 1/8 cup brown sugar, unpacked
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 large overripe banana, mashed (about 4.8 oz.)
- 1 egg white
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla
- 1/4 cup walnuts, chopped
In a large bowl, combine flour, bran, oats, sugar, baking powder, baking soda, salt and cinnamon.
In a smaller bowl, combine banana, egg white, applesauce and vanilla.
Add banana mixture to oat mixture and stir until fully incorporated. Stir in walnuts.
Line a cookie sheet with parchment paper. Using a 1/3 measuring cup, scoop batter and place mounds on lined cookie sheet.
Bake in a 350 degree oven for 8 minutes. Makes 5 big cookies.
Nutritional Facts: Serving size: 1 cookie. 181 calories, 5 grams fat, 5.1 grams fiber and 5.7 grams protein.

*tip – these freeze very well. Wrap individually in plastic wrap and store in a freezer bag or airtight container.

Cookies everywhere is right! I really wanted to make the peppermint bark, but then decided I would just eat it, so I better not make it! Good thing, I’d probably be scarfing it back with my tea right now! Oink!

Those look good! I am debating on putting off cookie baking until the last possible minute. My husband made some and they are hidden LOL!
with the husband home a bit more (usually leaves at 7 but with holiday slow down has been leaving at 8a) my daughter is NO JOKE beginning to think OREOS are breakfast cookies (hes a role model for nada

Well good thing I don’t have some of those ingredients listed because I’d be in the kitchen baking those right now. The breakfast cookies look yummy. My mom has been baking for cookies for weeks and I will definitely forward this recipe to her. Thanks for sharing.
I love healthy baking. These sound great, but I would sub out some maple syrup for the brown sugar.
