Leftover Love

Sunday was the last day of lounging around and late mornings and I took full advantage of it!  I cuddled in bed with little daughter til 9 a.m., then caught up on some blog reading :)

Another late and easy breakfast of Banana Nut Vitatop with PB2 and some Peet’s Mocha Java in the press…

Then I set out on a mission to organize and prepare for the week!  I got the last of the decorations put away, did mountains of laundry, made some hummus, cleaned out my handbag (scaaaaary) and started my grocery shopping list!

I tackled lunch next.  I’m trying to be really cognizant of what leftovers are in the fridge and making sure to use them up.  I’ve never been big on leftovers, but now I’m seeing it as a way to make the most out of my grocery shopping, not be wasteful and have meals ready for the taking when I’m really hungry.  And I did get hungry all at once and the Black-eyed Pea Salad from New Year’s Day was in the fridge waiting for me.  I made some whole wheat couscous (only takes 5 minutes!) and topped it with the salad…

More cleaning fun in the afternoon, along with a few (very lame) strength training moves.  It was technically my “day off”, but I snuck in a few.

Lunch didn’t hold me over as well as I had hoped, so I whipped up a Blue-Banana Smoothie

  • 1 cup frozen organic wild blueberries
  • 1/2 large banana
  • 1/2 cup skim milk
  • 3 ice cubes

Yum!

Pasta was on the menu for the husband and daughters, but I decided to continue on the leftover trend. Steamed pork bun (Cha Siu Bao) and broccoli with garlic and evoo…

After dinner, I did a chia seed experiment!  Details coming tomorrow!

I’m sooooo jealous of your lounging. My kids don’t comprehend that word. Mine go back to school tomorrow, so I’m looking forward to having MY house back. HA!

I cant stop drooling over those pork buns! lol I use to go to a Chinese buffet and I am embarrassed to admit to how many of those I would eat! oh my!

i LOVE cha siu bao!! we used to buy them take out from a dim sum restaurant but it closed… i’m heading to safeway to buy those asap! looks so good with that broccoli!
