Winter Wonderland

Happy Weekend, everyone!  Boy, do we have SNOW!!!  I have some good blizzard pictures to show you, but first…

Friday

I started off with a nice session of Yoga For Weight Loss on yogadownload.com.   After only a week, I feel like I’m getting a little better at it.  The plow pose though, is ridiculous.  I am glad that I do this in the privacy of my own home ;)

After yoga, I ate a light breakfast of Trader Joe’s High Fiber O’s with unsweetened vanilla Almond Breeze and 1/2 cup of blueberries…

Later, I met my friend, Jenn for an early lunch at McKenzie Brew House.  Actually, we were going to eat at a Thai restaurant, but it was closed unexpectedly – probably due to the impending snow storm!  I was a bit disappointed since I’d never tried Thai food and was looking forward to that!  Another time :)

Jenn and I got  right to chatting…

about yoga!  In addition to being a college professor, Jenn is a yoga instructor.  She has been practicing yoga for quite some time and gave me some great insight.  I won’t give away all her secrets just yet, since I wrangled her into doing a guest post!  Be sure to come back on Monday for that!

For lunch, Jenn and I both ordered the Blackened Salmon and Mandarin Orange Salad.  It was light and delicious.  I loved the orange and thyme vinaigrette dressing…

We both had to jet pretty quickly to pick up our daughters that were being dismissed early for the, again, impending snow!  Not a flake was to be seen, yet the kids were let out 1 1/2 hours early??!!!

The daughters were thrilled, of course and actually, it was a nice start to the weekend :)  

As always, Friday is pizza night.  I made homemade pizza along with pepperoni bread.  I was able to make it through with no major damage.  I had one slice of each and a side of carrots…

Later, I got a craving for something sweet so I decided to try out one of the Attune bars that I picked up after hearing both Kelly and Lori rave about them!

I ate a piece and gave the rest to big daughter.  These are GOOD!  A little bit scary good, if you know what I mean (like buy mass quantities and eat them for breakfast, lunch and dinner!)

Then, I chomped on some Wheat Thins before I called it a night…

Saturday

And then…there was SNOW!  Lots and lots of it!

We woke up to this…

The poor husband went out first thing and started to shovel.  It was still coming down in true blizzard-like fashion with whipping wind and drifting snow.  He was out for about 5 HOURS!  Our dog, Rocky kept him company for some of the dig-out…

Meanwhile, I was inside whipping up a nice, hot breakfast of scrambled egg whites, spinach, cheese and a slice of Dave’s Killer Bread

Then, I got The Crocker going with Danica’s Crockpot Broccoli Cheese Quiche.  I was a little hesitant about using The Crocker again, but Danica assured me this would be a good one – she knows I have issues ;)

She was right!  It was great and ready just in time for me to have it for lunch…

I cut this into 4 wedges (recipe says 8 or 10 servings, but that’s just too teeny for this girl!) and recalculated it to 6 POINTS per serving…

After the blizzard subsided, I ventured out with the husband and daughters and did some shoveling.  That’s some workout!  I shoveled for a little over an hour and my arms were sore.  The poor husband probably won’t be able to even walk tomorrow after 5 hours of it!

All that shoveling required a snack.  I noshed on some almonds…

and had a “mocktail”.  Half La Croix seltzer and 2 oz. POM pomegranate juice that was sent to me recently…

Dinner was yet another Danica crockpot creation – Kung Pao Chicken. This girl knows her stuff!  If you haven’t checked her blog out, head on over for some amazing recipes.

Since I had such success at lunchtime, I threw together the ingredients for this in The Crocker and by the time I came in from shoveling, it was about ready to go.  I served mine over Japanese (yeah, I know it doesn’t “go”…it’s a fusion thing;) ) soba noodles.  It was a hearty bowl…

We ended the night with a family movie, Ice Age :  Dawn of the Dinosaurs  (how appropriate!) while munching on some popcorn (sorry, no pic).  All in all, a relaxing snowed-in weekend!

Wow Marisa!! That is a whole lot of snow!! So, will you be out there playing in it???? (and the food here always looks so delicious!)

Whoa…that was a LOT of snow. You should have earned major activity points shoveling snow. Your broccoli dish looks really tasty. I may need to bust out my crock pot. I don’t really use mine that much.

That snow was incredible! I just can’t imagine having that much snow. That quiche looks great. Some of my family likes it and some don’t – but I love it!

Glad you liked the Attune bar! The fact that it has 5x the live cultures of yogurt will probably slow you down. ;-) LOL

I can’t get over all of the snow! I showed your pics to hubby. Brrr!

You’re starting to get me interested in trying yoga. Our Y has classes for beginners that I might give a try. :)
And your dinners look so good! I have a TERRIFIC recipe for crockpot stew that is healthy and point friendly that I’ll be sharing tomorrow. It really is incredibly good.

Glad you have found some enjoyable recipes with your Crocker ! They are a real convenience once you find the recipies that your pallet will enjoy. As to the snow – uggh ! Reminds me of the one HUGE storm we got here back in 67, and it literally took weeks for everything to get dug out. We just got some flurries and a lot of cold with this last pass. Take heart- all that shoveling really burned off the calories !

That crockpot quiche looks delicious. I’d totally make it 4 servings, too. 6 points isn’t bad at all.

I did a sh*tload of shoveling myself today. I can’t believe I never used to count this as exercise. It’s awesome exercise! That brocolli crock pot quiche looks awesome. I bookmarked it!

Sorry the Thai restaurant was closed – I hate when I have my mind made up on what I going to have and then have to go to plan B.

I am not envious of all that snow – by this time of the year I just want to see grass again!

Hello! New reader via your guest post – I’m in philly but from WC. Interestingly, I was looking at your recipes and I unknowingly made “fruit syrup” this morning for my whole wheat pancakes…the bf looked at me like I was nuts when I dropped a bunch of berries (straw+blue) into the frying pan after the cakes were done. It was delish!

Woohoooo ~ I helped you LOVE your crockpot again!!! They both turned out fantastic (freaky how much the Kung Pao looks the same). I agree – 8 servings is sorta small.

That is a TON of snow – hope it gets warmer there soon for you all.
