Going The Distance
Thank you for the nice comments about my 5 mile run! I am still in disbelief that I was able to do it and what’s more unbelievable is that I can walk today!
I thought I would be sore and hobbling around but, other than a little hip soreness, I’m fine! I feel so excited to run more now and keep pushing myself along the way. I’ve kinda made peace with the whole time thing. I haven’t been concentrating on it that much. I’m more interested in distance now and building my endurance that way. I’m looking forward to see what I can do!
Things have been going okay in the eating department. So far, I have stuck to the vegetarian for lent pledge and have been trying to make sure that I am eating wholesome foods instead of junk. But, I know that I am oversnacking in the afternoon some days. I eat my planned snack, but have been grabbing extra bites of this and that. I gotta work on reigning that in!
Okay, let’s get to the food…
Breakfast was a delicious Mock Egg McMuffin …
Then, I was off to the gym. I cranked out an easy-paced 45 minutes on the Arc Trainer at a resistance of 15. Totally fueled by GYM JUICE …

It is similar to granola with nice- sized clusters and chewy fruit bits. The nutritional stats are very decent, too at 190 calories for a 3/4 cup serving.
Good stuff
Dinner was a carbfest! I wanted pasta in the worst way, so I whipped up a baked pasta using Ronzoni Smart Taste pasta, mushrooms, asparagus in a smoked Gouda cheese sauce…
Very rich-tasting, but could’ve used more creaminess. More cheese makes everything better

Lots of good healthy eats going on in your kitchen as usual. I like the Ronzoni pastas, they have a wide noodle that is perfect for stroganoff and the like.
I will have to look for that Go Lean Crisp-love granola just not all the calories!

Hey, congrats on your 5k run! That is amazing! You must be so proud of yourself (and rightfully so!). Your baked pasta dish sounds divine! I often times crave pasta, too. There’s just something about that carby goodness that gets me. BTW, those roasted red peppers on your lentil burger look delicious. I like how you used asiago cheese.

Have you tried adding lowfat cottage cheese? I do that in my pasta bakes and it really ups the cream factor!
Still proud of you for your 5 miles and I totally agree – go the distance! I think it is more fulfilling to see my mileage increase than to stress out over how fast I am going. I am pretty sure I’ll never be a speed demon so I made peace with being a penguin. You are doing awesome – keep up the great work.
