Mocking The Tofu
Happy March! Whew, where is the time going????? Before you know it, we’ll be bathing suit shopping – YIKES! Better get crackin’!
I was ready for the gym this morning after the weekend of Cheetos and chocolate. : | First, I started with a healthy breakfast – 1/2 cup cottage cheese, 3 drops NuNaturals liquid vanilla stevia (loving this stuff!) and 1 cup of strawberries and blueberries…
I didn’t have time to drink my coffee at home, so I decided to bring it with me to the gym! I mentioned this last week on Twitter and Heather of Leading The Weigh thought it was a great idea! We decided to name it GYM JUICE! Hey, whatever gets us through the workout, right?!
I put my Gym Juice in my Disney cup in honor of Heather’s trip for the Princess Marathon…
It gave me the juice I needed to hit the Arc Trainer for 60 minutes! Cheetos be gone!
For lunch, I had fun with tofu. I made a mock egg salad using tofu!
I drained the tofu and blotted well with paper towels. Next, I crumbled the block into a heated skillet coated with non-stick spray…
I let the tofu cook for about 7-10 minutes until dry and slightly browned in spots. I transferred it to a bowl and let cool…
I added chopped celery and green onion…
then 2 tbsp. Kraft reduced fat olive oil mayo, 1 tsp. Grey Poupon dijon mustard, salt and pepper…
Mix and refrigerate until cold…
I served it in a whole wheat pita with baby spinach and carrots…
It was egg-cellent! No one would know it’s tofu!
Okay, well maybe my family would know since they snoop these things out
Not long after lunch, I got to preparing dinner. My parents and Gram were coming for dinner and to spend time with us before they move to the beach for a few months. I made Smothered Pork Chops for the carnivores along with baked adzuki beans, roasted potatoes, cornbread and a potato and green bean salad with shallot vinaigrette.
The highlight for me was the salad…

The weather is looking fab for the next couple of days! I’m going to try for my first outdoor run in over a month! I’m interested to see how I work the Galloway method for the outdoors. It seems do-able for the treadmill, but I’m wondering how it will feel outside when I’m used to running without stopping.
Any thoughts on this method? Anyone tried this as a different training method after you’ve already been able to run the distance?

I don’t eat meat and I rarely eat tofu. LOL! My people just might kick me off their team!
When I started to run I did C25K which is walking/running.
I dont do the galloway method but I know people that do and they are FASTER doing the walk/run thing vs running the entire time. I’ve been thinking that when it comes time for me a to do a full marathon I may give his method a shot.
I just posted about the galloway method today. I did my first run yesterday (after reading about it on your blog a few days ago and checking it out). I think it’s really going to be a plan I can follow. I’m also starting to use the CHI running method too for posture. I also didn’t care much about the c25k method of having to keep track of 1 minute/2minute walk/runs. I like the galloway method of judging when to walk/run on what I am feeling. Thank you for posting this for us,or I would never have found it on my own

I’m so afraid of tofu. I need to stop being a wuss. But that cornbread. My greedy jaws are drawn to it.

Tofu looked good. I still haven’t been able to get myself to try it again. Maybe I will this time.

Umm, where might I find the corn bread recipe? It looks sooo good. I usually make mine from a mix, but maybe I would be willing to branch out and try a scratch version

It’s a pretty basic, back of the bag recipe with a few of my own tweaks. I’ll post it up tomorrow, so check back
I actually have a book about the galloway method that was written for women. I tried it but at 250 pounds I quickly gave up. I just wasn’t ready. But I may try to put it into practice for maybe running a 10K or improving my 5K time after I graduate from C25K!
Looking forward to seeing your reviews of it after your runs.
You’ve got me craving egg salad – funny about how your family won’t eat many of your creations. My husband is exactly the same way, he has some irrational fear that I sneak tofu into everything.

LOL! Mine, too. When I make something…even cookies, brownies, whatever…he always asks if it’s “normal”! grrrrr….

I haven’t tried tofu again but need too.
What did you do with the adzuki beans – I bought some on the weekend and added them to the soup I made – I am going to try the caserole with them next.

I used the adzuki beans for the BBQ Adzuki Bean Burgers and tried to do a “baked beans” version with them for the dinner above. The taste was spot on, but the texture wasn’t quite there. I found the adzuki beans that I had (cooked from dried) didn’t have a creamy texture that a kidney or black bean has. It’s definitely a drier bean and would probably do best in soup like you mentioned. But let me know if you had success with them in something else. It could just be my bag of beans weren’t that great!
Forgot to mention the Galloway method – I have used a modified version of it (without knowing it!) since I began running last spring. It just makes sense to me and my body. I have never had an injury and thoroughly enjoy my runs because I walk if I am completely winded. I have been able to run further because of doing the run/walk thing too – it’s a great way to get the cardio without hurting yourself.

mmm dinner looked good but I am on the fence on the tofu egg salad- I guess cuz I tried one from trader joes and hated it. lol You are brave girl!
that green bean and potato salad looks really good, I want to try and make it at home! Baked adzuki beans? I’ve never heard of adzuki beans and I’ve never had a baked bean before! You’re full of yum eats!
This is my first time hearing of the galloway method – eek! No help from me! I do C25K though!!
I watched that whole post and STILL can’t believe that’s tofu – wow – looks like shredded chicken to me!
