Out Of Time
This is one crazy week! I have so much to fit in, but not enough time. We all feel that way, don’t we? :0
I was NOT going to let exercise go by the wayside, despite having to be out of the house early to meet up with Gram. After dropping little daughter off at school, I headed down to the basement for a quick run on my ancient possessed treadmill. Besides the fact that I have to watch that I don’t fall off of it because it isn’t very wide, the speed setting kept jumping around from faster to slower! It was working its own interval program! I sweat it out for 20 minutes. It wasn’t optimum, but I was glad that I did something!
I did make time for breakfast! I wanted eggs-in-a-hole for some odd reason. I didn’t have any sliced bread, so I improvised with a Thomas’ Bagel Thin.
It already had a hole, but not enough for an egg to fit. I used a biscuit cutter to get the right fit…
I sprayed a nonstick skillet with cooking spray, placed the large bagel ring in the pan and cracked an egg into the center.
All finished….with the mini bagel piece for dipping…
Served with a ripe pear and Spring Blend press…

Gram and I spent the remainder of the morning and early afternoon shopping for my Mom’s birthday and dinner celebration on Thursday. We made a pit -stop at Chick-fil-a (one of Gram’s favorite places) for an early lunch. I chose the Chargrilled Chicken Salad with fat-free Honey Mustard dressing…
It was a fine salad, but didn’t hold me over very long. I was definitely ready for a snack when the daughters got home from school. I dug into some Wheat Thins…
then, chocolate and jelly beans! I had a picture but can’t find it. They were so good my camera must have eaten it!
I planned burgers on the grill again for dinner. This time, I bought the all natural, no hormone/antibiotic, free range, vegetarian-fed ground beef from Trader Joe’s. I don’t believe this is considered organic, but it seems to be a step up from the supermarket brand.
The family liked these a lot better. The beef, which is a higher fat content than what I normally buy, still seems to be much leaner than even the leanest (96/4) supermarket brand. But, the taste is more in line with what we are used to, so this will be a keeper!
I served the burgers with a side of my Broccoli Cranberry Slaw…

Broccoli Cranberry Slaw
- 1 bag of broccoli slaw
- 1/4 cup dried cranberries
- 2 tbsp. honey
- 1 tbsp. olive oil (light, not extra virgin)
- 2 tbsp. red wine vinegar
- s + p to taste
Mix ingredients and refrigerate for 1 hour before serving.
I seem to have found some time to make dessert. I had almond butter in the fridge that I wanted to use up. The Almond Butter Chocolate Chip Cookies from this month’s Clean Eating Magazine was the perfect recipe…
Err, one too many of these may have got in mah belly…
Out of time. Out of cookies. In to the gym :\

I love eggs in toast! And that picture with the coffee and the pear? It’s gorgeous. I would totally frame it and hang it in my kitchen.

Great improve on the eggs-in-a-hole! favorite cookie would have to be anything with chocolate AND peanut butter!

Did you know vegetarian and grass fed beef is actually leaner than corn fed beef? So, even if it is not organic, you are better off with grass fed.
That broccoli slaw sounds good. I love cranberries and broccoli!
When my kids were little I use to make them eggs like that and we called it toad in the hole! It looks so cute with the bagel.

My favorite cookie is the peanut butter blossoms, you know that peanut butter cookie with the chocolate in the center. Holy yum!

My favorite cookies are one that I only make during Christmas time. Reason is because they are time consuming to make and hugely fattening! I tried a long time ago to make that low fat, but, eh! You need them fattening! The cookies are Pizzelle’s. They are Italian waffle cookies made on a pizzelle grill. Marisa, do you know what these are? SO GOOD! SO GOOD!! YUM!

And I looked at your egg-in-a-hole picture 3 times before I could figure out what that mini-bagel was doing next to it! lol. Oh! It’s the center you cut out of the bagel thin! I’m slow today, sorry!

Don’t eat cookies very often, but I love macadamia chocolate chip cookies!
I make a similar slaw recipe but I put pieces of broccoli florets in mine too. Either, dark chocolate chunk with pecan or a dark chocolate dipped macaroon (the ones from our local Godiva store are to die for!) cookies are my favorite
