A Weekend Goal
Happy Monday! How did your weekend go? Things here were good in the ‘hood; lots of family time which is always fun :\
No really… it was.
I’ve been finding that weekends are getting a little wonky in the food department. I haven’t been whooping it up or anything, but there’s definitely more BLT’s (bites, licks and tastes) than I want to be doing. My goal for this month is to be consistent with my journaling, even throughout the weekend. I know that keeps me on track and more aware, so I need to continue that over the weekend!

Sunday was run day. I was nervous about the hip and hoping that it wouldn’t act up. I gave myself a pep talk while preparing my pre-run smoothie. I went tropical on this one with the addition of mango…
In the blender…
- 1/2 banana
- 1/2 cup mango chunks
- 1/2 cup unsweetened vanilla Almond Breeze
- 3 ice cubes
Smoothies have been working out great as pre-run fuel! It seems that lighter is better. It gives me just enough to keep me energized without weighing me down.
After chugging, I headed out to run. It was HOT! Whoa, when did summer get here?! I was super hesitant about the run, but everything seemed to be okay. I did some stretching and foam rolling (more to come on this nifty thing) before I left, so I was nice and warmed up. I kept with 10:1 intervals and finished with 3.8 schweaty miles.
Then, I headed to Trader Joe’s. I picked up some new finds. I was most excited about THIS…

The facts…
You know I dug into that baby as soon as I got home. I spread it on a high fiber tortilla and layered on Applegate Farms Roasted Turkey Breast and baby spinach…

Dinner was something that had the family jumping for joy – Pepperoni Bread (or stromboli)…
I was making a few for little daughter’s Communion party this coming weekend. I decided to keep one aside for dinner. They were doing the happy dance. They think I’m going soft on them. Hmph. I’ll have to torture them with fish and vegetables tomorrow
I joined in the fun, too …
I’ve got a busy week getting ready for little daughter’s big day, so I’m not sure how creative meals are going to be around here! I’ll do my best not to bore all of you!

Great notes on those products – i’ll be on the lookout… especially for the hummus – wow!
The weekend BLT’s are my downfall. May and June are so busy. Constantly a thing, a party, a bbq, baseball games, I am trying to do better, packing lunches and bringing healthier dishes but, when grandma brought in a cold stone creamery cake that even my husband who doesn’t like sweets was raving about, I had too. I need to keep better track of my weekends definetely! My new find, skinny carmel macchiato creamer for my coffee. YUM!
My newest favorite food find are the bagel thins everything! Love them! So good toasted. Yum.
I also an enjoying the Cacao Nibs, a nice chocolate flavor with some crunch,great paired with plain yogurt and strawberries.
i would have needed about 2 more slices of that stromboli than you had. it looks so good!! trader joe’s has the best snacks… that’s part of my problem though.
I found salt and pepper popchips at the Shoppers here in town last week. Tres dangerous but better those than a giant honkin bag of potato chips, no?
My favourite of late is the chickpea salad I got from some cool chick I found in the blogosphere. Hmmm, who was that now? Oh ya: it was you!
I’ll totally be ripping off Mr. Trader Jose on that recipe. Why didn’t I think of that???

Love PopChips! I think they may be better than honkin’ chips
So glad you like the Chickpea Salad; it’s one of my faves, too!
My favorite food is definitely a toss up between potato chips & bread. Really, any kind of either of those foods will get eaten in .5 seconds. I probably shouldn’t even keep them in the house, haha.
PS: The pepperoni bread looks amazing! I’ve never made that before, is there a specific recipe I should use or would any general recipe be good?

It’s really easy – use your favorite pizza dough recipe (or store bought-sometimes I use Trader Joe’s pizza dough), roll it out into a rectangle, add a layer of sliced pepperoni, add a layer of cheese, sprinkle with oregano or any spices you like, fold in the short sides and roll up jelly-roll style (or burrito-style). Make a couple slits in the top , then bake in 400 degree oven for 25 minutes or until golden.
I heart the word “guacamummus!!” Smart, Mr. Jose!
Gauc/hummus that sounnds amazing. I will have to look for this one in the grocery store. My goal for the month is more blogging as well. I especially love smoothies during the warm months.
Guacammus – I love it! You should TM that word. I’ve got my daughter’s 4th birthday and I’m hosting Mother’s Day this weekend, so I’ll be sweating it out with you this week!
Right now I’m digging those Applegate Farms Stadium Hot Dogs I found – they are delish!

I am such a fail. I can’t even think of a new food find. I will steal your ideas!
Weekends here are challenging because everything is a different rhythm. Loads of wild cards, errands and so forth. I plan meals but often things get sidetracted because commitments take longer than planned, schedules get changed and so forth. Weekdays mean consistent meal times , locations and so on. Enjoy planning for your daughter’s special day ! It is moments like these that make memories and strong family bonds
I am so jealous of Trader Joe’s right now. Hmph. I hope the preparation for Communion goes well. Sounds like a crazy week. Good luck with that, and don’t you dare worry about ‘boring’ us. You’re awesome! You’re going to do great.
