It’s Back!

The running mojo is back!  Happy, happy, joy, joy :)  

I got two new things that helped me get back in the groove.  First, a running buddy!  The mom of one of big daughter’s friends asked if I would be interested in running together and I said hells to the yeah!  I haven’t talked about it on the blog, but I’ve been feeling unsafe running alone.  I try to stay in neighborhoods or on non-wooded trails because of it and it gets a little boring after a while.  Do you feel that way when you exercise outdoors alone?

I’ve been looking for something to help me with my run/walk intervals.  Staring at my watch was dreadful and although, I would LOVE  a Garmin Forerunner or even a Polar, it’s just not in the budget.  But this baby is!  The GYMBOSS is $19.95.  That, I can do!

The GYMBOSS is an interval timer that you can program for specific time frames varying from 2 seconds to 99 minutes.  The best part of this timer is it has an alarm that you set to beep, vibrate or both to alert you to the interval changes!  No more clock watching! 

I set it up before meeting with my running buddy (Hi Kerri!), which was very simple.  There are even a few reminders on the back …

We decided to do a 5:1 interval and I set it on “beep high” so that we both could hear it.  I clipped it on my shirt and we were off.  We ran around the neighborhood, talking when we could and the time flew by!  We ended up doing 4.34 miles in 59 minutes with a 5 minute walk to start and cool down.  In total, it came to 8 intervals …

Definitely makes the intervals much easier and gave me time to get into the run, instead of just watching the clock.  I highly recommend it!   It can be used for a variety of other exercises, also like weightlifting, HIIT and kettlebells.

Before the run, I wasn’t into my normal smoothie, so I noshed on some almonds, dried apple and a date…

When I got back, my stomach wasn’t up to eating a real breakfast.  I drank a pond of water, so I waited and had an early lunch.

I was ready then!

I decided on a grilled veggie panini using the leftover veggies from Saturday’s lunch.  Here’s my tutorial on how to make a panini on the George Foreman Grill!

Heat up the GF…

Spread a wedge of Laughing Cow cheese and a tbsp. of TJ’s roasted red pepper and artichoke spread on a slice of Ezekiel bread …

Layer on the veggies…

Top with the other slice of Ezekiel and put it on the hot seat…

Close the lid and slowly press down.  It’s all done when it looks like this…

I served the panini with a side of carrots with TJ’s tomato and basil hummus for dipping and roasted chickpeas…

I posted on Facebook that roasted chickpeas are addictive!  They are so easy to make, too!  Drain and rinse a can of chickpeas, dry them a bit, toss them with olive oil and your seasoning of choice (I used taco seasoning) and roast on a rimmed baking sheet for 20ish minutes at 450 degrees.

I made up for my lack of pre-run smoothie by having it for an afternoon snack…

Just a basic one with 1 cup skim milk, 1/2 cup frozen mango, 1/2 cup frozen raspberries and 1 tbsp. date puree.

Dinner was fish and vegetables.  Cue the crying and whining.

Dover Sole with lemon dill butter and mixed vegetables is a very fabulous dinner.  No matter what they say ;)

WOW – cool stuff! I love that GymBoss thingie. And I think I may have to try the roasted chickpeas. I love fish and eat it a million different ways. I have some great salmon recipes, like w/ equal parts low salt soy sauce & honey glaze, and the whole family loves baked fish tacos. Good stuff.

I’m always scared to run alone, most of my routes are busy but I always feel someone might jump out in front of me! I don’t run in the dark because of this.

That grilled veggie panini looks absolutely delicious!

I love fish, all seafood, actually. Grilled salmon is my favorite, followed by poached salmon or tuna. :)

Yeah, so glad you found your mojo!!! I’m also glad you found a running partner – I’d be nervous about exercising outside alone as well.
Oh man – I have like 3 cans of chickpeas in my pantry – now I know what to do with them!!!!

I’m happy you found a running buddy! I wish I had one :-( Yes, I have felt unsafe running before. We used to live in a large neighborhood that spanned a mile wide. It was great for running and it had trails, but I still never felt safe esp when I ran at 6 am in the morning in the dark! We now live in a small neighborhood with 2 streets 1/2 mile long each! I can see my house practically the whole time.

I LOVE fish! It was the only thing I craved when I was pregnant. I know you aren’t supposed to eat much fish when you are pregnant, but I had at least 5 servings a week! I have gotten out of the habit of eating it since my pregnancy except for the occasional tuna from a can which is not near as healthy. I do take a daily EPA/DHA supplement to make up for it missing in my diet.

I eat fish any way it is made, big seafood person here. I need a new george foreman, mine is about 13 years old. Your sandwich lookd very yummy! Glad you got your running mojo back!

I love making roasted garbanzos- but do not like them leftover, they get mushy. How are you storing them?

I’m storing (what little I have left!) in an airtight tupperware container. They keep for about 3 days. If you make them crisp enough, they don’t get mushy the next day. But, you can reheat them in the toaster oven (or I bet a microwave would work, too) for about 5-8 minutes to crunch them up again.

Oh, and just store them at room temperature. They don’t have to be refrigerated.

Awesome that you found a running buddy…and that you caught the mojo I threw back at you! See I told you you could catch!

I don’t eat fish. I hate it. I don’t like any seafood at all, lobster, crab, shrimp, anything! Yuk! I think it’s mental from when I was a kid and was forced to eat it.

Yes! I love fish now. Especially salmon baked with herbs. Yum!

I ordered 2 gymboss’ from your sidebar link :-) My mom is actually a beginning runner and I wanted to get one for her for a while. And I order one for myself too.

I have a Forerunner and while it’s a neat tool, it’s pricey, and their HRMs are very inaccurate. For cals burned, I have to wear my Polar to get a good value. But for distance, pace, HR data, etc, it’s a cool. I’ve had a 301 and a 405.

Could I just come eat at your house the rest of the week? Really Marisa everything looks absolutely scrumptious! Oh those roasted chick peas are way to hard for me to stop eating. I had to stop making them, they are like potato chips to my brain!
