Let The Sun Shine

Happy Friday!!!  The weather has been gorgeous ‘round here which always seems to give me more spring in my step. :)

Well, that and some coffee…

Pardon my messy desk.

I had a run scheduled for today so I whipped up my fuel…

In the blender went 1 cup skim milk, 1/2 banana and 1/2 cup frozen mango.  It could’ve used some Malibu Rum, but other than that, it was a keeper.

Then, off I went.  I mapped out a new route in a different neighborhood.  It was a nice change of pace, mainly flat (which I love) and had a one mile loop.

Mile one = totally suckish.  Mile two = semi-suckish and non-groovish.  Mile three = better, but not by much.

Great run, huh?

I don’t know what was up.  Just one of those days where I wonder why I run.  It’s a funk.  I hope for it to leave soon :)

When I got home from my fantastical run, I was hungry!  I reached in the fridge for a Fruit Crisp (recipe to come) that I made the other day and didn’t get around to eating….

It held me over just long enough to meet up with Mom and Gram for lunch at …

Did you guess?  Yep, Gram’s favorite place – Chick-fil-a!  I get the same thing every time I go – the Chargrilled Chicken Garden Salad.  I’m so boring.

And starving three hours later!  I dug into some Mary’s Gone Crackers and Applegate Farms Herbed Turkey Breast…

There was no trickery for dinner tonight.  I gave them a reprieve with a nice bowl of pasta and salad.  I decided to plow through some of the leftovers in the fridge and the stash in the freezer.

From the deep freeze came these…

and from the fridge came the last of the Giant White Beans and Raita Creamed Spinach…

I love easy dinners :)

I love dessert more… homemade watermelon ice

This could not have been more simple.  I froze cubes of watermelon, put them in the food processor (you can use a blender) and pulsed until chopped.  So good on a sunny day :)

Water ice definitely !!! I grew up in Chicago and several of the near suburbs, filled with loads of hot dog stores that also carried italian Ice. We almost never went out for ice cream ( that was something you got at birthday parties only) but we would stop for italian ice once a month. I have tried to make my own at home with a few recipes I have in my collection, but it is rare that I can get enough room in my freezer to freeze the mix !

Those eggplant meatballs look interesting!

Oh…I’m an ice cream girl all the way. Unless I need a low cal treat then I get creative and start blending whatever I have in the fruit bin with ice. That being said…I’ve never tried watermelon…another great idea!

The meatballs look intersesting, How are they? Ice cream definetely!

They are okay; they have a firm texture and a bit of a strong oregano taste to them. I like them best with sauce and cheese. They need a little doctoring up ;)

I’ve never had water ice?!

The meatballs are interesting – hmmm. I’m loving that salad – it’s a favorite of mine with the fat-free honey mustard dressing!

Those meatballs look great and not bad on calories/fat!

I’m a total ice cream person but on a really hot day, some kind of water ice fruit something is rally tasty and hits the spot.

Ice cream is my weakness! I’ll have to try the watermelon idea though!

I love water ice. I grew up near Philly with ritas so I can’t deny it. Besides I don’t do milk well.

We don’t have a Chick-fil-a here- doesn’t look like I’m missin out on anything. No offense, but that salad looked BLAH! lol

I tried those eggplant meatballs- I did not care for them :(

I’m negative Nancy today huh? lol Ok wait, I think the watermelon ice looks GREAT- how easy is that too! :)

Your watermelon ice looks just as good as my watermelon sorbet – pretty sure yours is healthier since mine had vodka in it! :D

LOVE the water ice idea! I promised my first graders and ice cream party but I am on the school nutrition committee and felt like such a fraud- I tell others no sugar and than I give it to my students?! So I bought a watermelon, cubed and froze it, and I will be making it with my kids this week. Can’t wait to try this idea with other fruits! So simple and smart.
