Banana “ice cream” for breakfast?  Um, yes please…

I thought this would make  great pre-run fuel!  After all, it’s just a frozen banana topped with a few almonds.  It was a nice treat to get me going!

And I can’t forget the press…

My running partner wasn’t feeling well today(missed ya Kerry!), so it was just me and the GYMBOSS

We had a nice 4.1 mile run together.  I really lost myself in the music for a while there and actually ran through one of the intervals.  My music was a little too loud, I think.  Eeek.  Hearing loss is imminent.

After my run, I headed home to a messy house and a growling stomach.  I fixed up a real breakfast…

But, I did change it up a little, see?

That’s not egg, it’s homemade turkey sausage!  I made some yesterday while pre-grilling turkey burgers to stash in the freezer for future meals.  Yeah, you may be seeing lots of burgers to come. :)

I used half of the turkey breast and threw together some sausage-like spices to make these.  I think they turned out well. 

Turkey Breakfast Sausage

  • 1/2 pound ground turkey breast
  • 1 1/4 tsp. poultry seasoning
  • 1/8 tsp. salt
  • 1/8 tsp. red pepper flakes (or more if you like it spicy)
  • 1/4 tsp. garlic powder
  • 2 tbsp. water

Mix spices and water together with turkey breast until fully combined. 

*note: water is for additional moisture since turkey breast tends to be dry.  You can also use regular ground turkey instead of breast.

I shaped them into four thin patties and parked them in the fridge for about 4 hours to firm up and let the flavors develop.  Then, cooked them in a bit of olive oil until golden on each side.  Just needed a quick reheat in the micro this morning for a great breakfast sandwich.

Next up was tackling the house.  Annoying and unsatisfying work, I might add.  :|   In my previous life, I’m pretty sure I had a house cleaner. *sigh*

Lunch did not make an appearance until much later in the day.  That breakfast sandwich really held me over quite a while.

I decided to try this new find because TJ said it was good and I trust her implicitly :D

It was surprisingly delicious!  It was creamy with a slight hint of smokiness from the cumin, but not spicy.  The mix of lentils and red beans made it a filling meal.

Alongside, I went with carrots and a corn tortilla for scooping up the Madras Lentils and a string cheese because life would suck royally without cheese …

More cleaning in the afternoon.  Gah!

Then, it was time for a pre-dinner snack… and a picture this time!

Cashews and unsweetened dried cherries – a great mix of sweet and salty!

Well, the turkey burger future came quicker than I thought!  I got lazy at dinner time, so it was meatball subs for the family (luckily I always have meatballs made up in the freezer!) and a Grilled Taco Turkey Burger for me…

Grilled Taco Turkey Burgers

  • 1/2 pound ground turkey breast
  • 1/2 tsp. chili powder
  • 1/4 tsp. cumin
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1/8 tsp. paprika
  • 1/4 tsp. dried oregano
  • 1/8 tsp. salt
  • 1/8 tsp. pepper

Mix turkey with spices and a few tablespoons of water for additional moisture.  Coat a preheated grill with oil.  Cook burgers about 3 –4 minutes per side.

I topped mine with lite cheddar and a dollop of organic fresh salsa…

and served it with my new favorite salad:  grape tomatoes, avocado, red onion and cucumber dressed with a drizzle of olive oil and a dash of red wine vinegar…

Yummy food Marisa. That salad looks incredible and it is a combo I have not tried. Thanks for the idea.

I made up a dozen turkey feta burgers this week so I can freeze some for easy meals down the road. I love having things prepared ahead of time, it saves me!

We grill chicken the most just because our kids like it the best!

What a super idea. I have bought turkey sausage, but don’t like the sodium/fat content. I’m going to have to try yours out. It looks so good.

What do we grill the most? Hmmm….probably burgers or chicken. Although now that it’s summer….some seafood kabobs are sounding pretty good :)

Usually chicken. Cashews, I love Cashews! I always pick them out of any mixand eat them first!

I make chicken most often but I really should eat burgers more often! I think the next burger is that taco turkey burger! MMMMMMMM!!!!

Turkey sausage sounds really good about now. Need to get some ground turkey.

We grill chicken mostly, although we will put pretty much anything and everything on the grill at least once.

I had to post to say that the turkey sausage looks great! I will have to try that! I love to grill turkey burgers made from lean turkey. Like you, I found they could be dry so I have added onion and small can mushrooms (finely puréed in food processor) and it makes the burgers very juicy, good flavor, and makes the meat “go further”. You can also add mashed avocado to the meat mixture for healthy fat and juiciness! Avocados are good on the burger but adding to the meat helps with texture/juiciness.
I also love to grill eggplant! Used to hate the stuff but I had it grilled with some Cavendars Greek seasoning and oh my, was it scrumptious!

Anyhow, love your blog – so glad no sugar is helping you. It helped me alot! I agree, some things just can’t be had in moderation, if I get sugar, I binge. It’s like an alcoholic not being able to have one small sip. I just have to abstain and am better off!

I probably do more chicken than burgers – I just made the best grilled chicken last night for dinner – so flavorful!

Wow, 4.1 miles?! You’ve really come so far since you first started running! I seem to remember us talking about struggling with much smaller distances ;)
Still haven’t tried banana soft serve. Gahhh–I need a food processor!

I just started reading your blog and love it! Question, your french press coffee looks so incredibly creamy….do you just use milk to make it look that thick? I’m a coffee lover myself and am debating getting a french press, so just curious….Thanks!

Welcome, Gretchen! I do use a little nonfat milk. I think what gives it the creamy look is to slow pour it out of the press into the cup. It gives it a “crema” top similar to cappuccino! DEFINITELY get a french press!! You will LOVE. :)

I love how breakfast started with dessert!! I usually have banana soft serve for dessert, never thought of trying it for breakfast…I will now :)

Thank you for the turkey sausage recipe! I had a turkey sausage sandwich for breakfast a few weeks ago when visiting my sister, and have been craving it ever since. I made some the other day, just had a sandwich for breakfast and it hit the spot. (Even though I accidentally grabbed the allspice instead of the poultry seasoning – so even though I scraped most of the allspice off, a bit of that flavor remained). Oh, and the frozen banana ice cream is even more yummy with a handful of frozen cherries thrown in, btw.
