Even running. Thursday is a run day. I didn’t really want to because it was hot and so humid! I wasn’t very hungry, so I fueled with half of a Peanut Butter Cookie Larabar…
I met up with my running buddy, Kerry, at our usual trail. Since the humidity was in full force, I thought it might be better to change up our intervals to a shorter time. I reset my GYMBOSS to a 2:1 interval and it was much more comfortable for this weather. I was short on time today, so our run ended at 3.27 miles in 42 minutes with 14 intervals…
I raced home to shower up and meet my MIL for some shopping and lunch to celebrate her birthday. After browsing around the Christmas Tree Shops, we went to Panera Bread to eat lunch. I usually get the soup and a sandwich, but since I’m staying away from flour, sammies were out. In a way, it was nice to explore some of the other options. I tend to get in a rut and order the same things when I frequent a restaurant!
I branched out today and got the Chopped Chicken Cobb Salad with an apple on the side…
It was pretty decent. All the goodies like bacon, egg, and gorgonzola cheese were hidden underneath the chicken!
True Confession Time: I hate making salad. I don’t like cleaning the lettuce, don’t like chopping up all the stuff to go in it or trying to come up with interesting ways to eat it.
Actually, I used to hate salad altogether. When I was a kid, my parents would make me sit at the table until I ate it. Sometimes, I would still be sitting at the table at 9 p.m.! I just couldn’t stand it, which is crazy because my Mom makes great tasting salad! Now, I’ve grown to really love salad. When someone else makes it.
After our nice afternoon out, I headed home to prepare for dinner. I invited the in-laws over for more birthday celebrating. I was lucky enough to have some of Gram’s manicotti with bechamel in the freezer, so I heated that and really only had to make asparagus and my favorite thing to make…
Salad
I decided on a Salmon Roulette for my dinner, along with salad and steamed asparagus with marinated mozzarella balls…
I ended up only eating the salmon portion of the roulette. In looking at the ingredients, I noticed that there is added sugar as part of the stuffing! Isn’t that crazy? It really is in everything! I don’t want to get all “sugar is the devil,” and crazy about this, but it is shocking how sugar is added in so many prepared food items when it’s not necessary.
While everyone was digging in to cake for dessert, I mixed up some mango soft-serve! It’s basically the same method as banana “ice cream”.
Start with frozen mango chunks…
Defrost slightly or nuke for about 15 seconds (frozen mango was like rocks, so this will keep your food processor from biting the dust) and place in food processor…
Let the processor run until mango is smooth and creamy…
Rich and delicious! I like making soft-serve!
Salad…. not so much

I love salad…the bigger the better! But like you, I’d rather not make it myself I’d rather go “make” one at the Whole Foods salad bar….even though it costs a pretty penny!
I LOVE salad, but will run screaming from the room if it is made with iceberg lettuce. I think iceberg is the most boring, bland , uninteresting thing on the planet ! I always start with a base of two dark greens and then add on from there. I have come to adore salads with fresh fruit included in them !
One thing about sugar- it’s not always included for the taste but rather for the color of the final product. Sugar helps grain things brown, is necessary food for yeast and other such reasons.
I LOVE salad if someone else makes it. Like you – I HATE making salad!!!!
I love salads, but I don’t always love making them either… When I have time and am in the mood, I enjoy the chopping. But sometimes not so much. Right now my favorite salad is my “summer salad” with tomatoes, cucumbers, black beans, corn, and edamame. Not that much chopping!

Im trying to love salad. Sometimes I buy the already mixed iceburg, or the romain, but I really love the spring mix. One essential is always cheese, sorry, love it. Extra sharp cheddar shaved over it. Some baby carrots and green peppers. All the other goodies come if I feel like putting in more effort LOL.

I have been at that table at 9pm, mine was either hubbard squash or white rice with milk and cinnamon. My step-mom would make them all the time, ooooh how I hated them. As far as the salads go, I hate chopping my self, so I get the prebagged stuff and anything else I have to chop…..FOOD PROSESSOR
I go in spurts with salads. I only buy the bagged mixed greens, because like you, I don’t like the prep work with lettuce. Yes, it costs more, but I don’t waste it that way and actually eat it LOL!
I love mixing some cooked chicken with BBQ sauce and using that as my salad dressing. With other toppings.
Mango sorbet looks delicious!
I love salads! And I don’t mind the chopping – but, truth be told, I make them when my daughter is home and she is my sous chef and does most of the chopping!

I agree with the coffee statement!
Some of my salads don’t even include lettuce! lol I like cole slaw, broccoli slaw, & shredded carrots instead. OR if I do use lettuce its a small amount or I slice up some fresh spinach.
That mango looks so good, I use the TJ frozen mango in my smoothies when they are not in season but they are now so I have been enjoying the fresh. My new fav is a fresh mango and papaya smoothie.
Also hate making salad – especially the lettuce so often I just cut up cuces, tomato, peppers etc and have that.
I like salad but I make them VERY plain. Lettuce, tomato, cucumber are my standards. I also love to eat them when others make them!
I’ve gotten those frozen mango chunks from TJ’s before. Very good.
I’m not opposed to eating salads, in fact when served with fun toppings (nuts, seeds, goat cheese, salmon, etc.) I absolutely love them. That being said, I LOATE making my own salads at home! I think I’m awful at it, never have the right ingredients for them and when I do go out and buy all the ingredients and fun toppings I get so sick of it by the second day that it all goes to waste.
I say leave it up to the professionals. Or mothers, they always seem to make them the best anyway.
It never occurred to me that chopping might be the reason I avoid salads but you might be on to something. Here I thought I didn’t eat many salads due to my preference for giant plates of pasta.
Sometimes I don’t want to take the time to make salad but I love to eat them! Nice job with the soft serve! I have a strawberry spinach salad that is my all time favorite. I posted it on my blog, not only does it taste good but it is beautiful!
I love to eat salad. I hate to make them. My favorite is sweet pork taco salad. Or caesar. But usually I eat just lettuce tossed with vinegar or lemon juice and some salt and pepper.
I love salad. I like a base of mixed greens with some sort of grain and then whatever is in my fridge. It’s all fair game.
That was funny when you mentioned what you do like making as opposed to DON’T! I have found that a good knife has helped making a salad more tolerable.
Just wanted you to know I love reading your musings, observations, recipes, ideas, etc. I felt an immediate connection because of the number of coffee ‘mug shots’ on here. My husband makes mine every morning and it’s one of the high points of my day. You don’t mess with the coffee. Thanks for sharing with all of us and for inspiring us. PS..I too hate fixing salad. What is that? I love eating them, but it sure feels like a ridiculous amount of washing/chopping/etc.
