So Nutty

This whole “letting the gym membership expire” isn’t working out so well.  Now that I don’t have a place to be, I only want to be laying on the sofa!  ;)

I know my schedule just has to get back in gear.  I’ve been allowing myself to sleep a little later instead of getting up and going.  I have learned from experience that if I don’t work out in the morning, I find every excuse in the Universe to ditch it.  Today was another one of those days, but I knew that I was going to see some pool action later at least!

Funny thing though… I never ditch breakfast…

Back to the usual – mangled up egg whites on an Ezekiel english muffin.  This time with lite cream cheese.  Yum!

Never. ever. ditch…

I spent HOURS screaming gently nudging the daughters to get ready for the pool.  We were meeting Mom and Gram at my parents’ neighborhood clubhouse and pool for lunch and splashing.

I packed up our lunches which we ate poolside.  I brought a turkey, spinach and dijon mustard on Ezekiel bread…

IMG_7258

and a fabulous side – fresh organic peach topped with nonfat ricotta cheese, drizzle of honey and a sprinkle of sliced almonds…

IMG_7255

Epic

IMG_7256

We splishy splashed in the pool for a couple of hours, then headed home for a shower and snack…

Step away from the almonds!  I was really munchie and could have done some serious damage on those babies.

Decided to do some grilling tonight – grilled Buffalo Chicken with Blue Cheese Dipping Sauce again!  On the side, some carrots and farm fresh corn with Honey Lime Butter

IMG_7270

Yes, buttah!!!  Hey, corn just ain’t the same without it ;)

For the Honey Lime Butter, I mixed together…

  • 2 tbsp. butter, softened
  • 1/2 tsp. lime juice
  • 1/4 tsp. honey
  • zest of half lime
  • s +p to taste

It was a nice complement to the sweet corn and spicy chicken.

I ended the night with a nutty dessert – Gone Nutty Frozen Bananas!  I adapted this recipe from Get The Sugar Out which originally called for the use of almond butter, almond milk and ground almonds.  I substituted with the peanut theme instead!

  • 1/4 cup nonfat milk
  • 3 tbsp. natural peanut butter
  • 1/4 tsp. vanilla extract
  • 2 ripe bananas
  • 1/2 cup salted peanuts, chopped fine

Blend milk, peanut butter and vanilla in a small food processor or blender until smooth and creamy…

IMG_7263

Peel bananas and cut them in half crosswise…

IMG_7266

Roll banana pieces in the creamy coating (kind of messy but fun!)…

IMG_7267

Then roll in chopped peanuts…

IMG_7265

IMG_7269

Place in freezer until set.  Allow to thaw a few minutes before chowing down…

Would be amazing drizzled with honey or chocolate!  You’re welcome :)

Have a great day, everyone!

What is your favorite nut?  Mine are cashews!!!

I love pecans! Especially when they are salted or candied. Yum.

Yum, yum, YUM! That all looks fabulous. I am the same way w/ my workouts – if I don’t get it started by 9 am or so, it’s not going to happen. Give yourself a little break – it could be that your body needs some sleep. And then get back into the routine. You can do it.

Almonds!! In any way, shape or form! LOL!!

Love the banana recipe – it just became tonight’s dessert.

I’m suffering from the summer exercise “blah” also.

I’m going to have to agree with you on this one…almonds used to be my BFF but now that I’ve started flirting with cashews I’m in love!

Almonds are my fav. I really love smokehouse ones…but don’t eat them often cause of the added salt so I stick to unsalted raw ones.

You know I never even thought to add PB to my frozen banana. OH NO I could be in trouble :) . My favorite nut is also cashews. can’t have them in the house but if I see them in a nut bowl at a party……..Funny thing every one in my home likes a different nut better.

Love that banana recipe!

I may try that with soynut butter but I need to think of something to dip it in that isn’t a nut – I’m allergic! Maybe a crushed up cookie?!?

I’m starving and could really use that pretty sandwich or a few of those nutty bananas right now! They look sooo good! Although they aren’t technically a nut (they are a seed–I just learned that recently), my favorite is cashews too! Which is why I only rarely have them in the house. It doesn’t how big the container that I buy them in, the whole thing is gone within a week so they are just a once-in-a-while treat for me.

I am so going to try that nutty banana recipe–am just sad that it will have to wait until later this weekend (we are traveling to Louisville, KY this evening…would have been the perfect travel companion!!!).

And as for the nut question….I would have to go with cashews as my favorite nut!!!

Does Reeses peanut butter cups count? :)
