Best Vacation
My parents joined us at the shore this weekend, so my Dad came with me for a morning bike ride! Look at us in our matching t-shirts…
LOL!!!
We set off to do another 7 mile ride. I wanted to try to beat my previous times of 39 minutes. Poor Dad thought this was going to be a leisurely ride! But, he was up for the challenge. We started off great and got down to the north end in about 18 minutes. However, on the way back, we realized that the annual Brigantine Island Triathlon was in progress! We ended up smack in the middle of the biking part of the race. We got to see some of the leaders of the pack racing through the streets…
We couldn’t really continue on our ride until there was a break in the packs, so we hung out and cheered everyone on as they flew by us! It was so fun! Some of the racers said "thank you” as they rode by; especially the ones who were struggling a bit. You could tell they appreciated the encouragement. It was very inspiring to see them all!
Needless to say, we didn’t beat my previous time, but it was still a great ride! I was ready for a nourishing breakfast after seeing these athletes. I got powered up with some Peanut Butter Banana Oats…
- 1/3 cup old-fashioned oats
- 1/3 cup nonfat milk
- 1/3 cup water
- dash salt, cinnamon and vanilla extract
- small banana
- 2 tbsp. PB2
- 1 tbsp. walnuts
Never thought I would, but I officially like oats!
We packed up lunch for our last day on the beach. This was one of my favorites of the week …
An Ezekiel english muffin with a new flavor of Laughing Cow Cheese – Mozzarella, Sun-dried Tomato and Basil …
topped with sliced garden tomato…
Along with a salad containing an interesting ingredient…
Can you guess?
Sardines!!! Hey and pork and beans…
Yeah, I went to summer camp as a kid.
Anyway, I know you’re thinking “eeeewwwww” ! I’ve thought that also. But, my Mom opened a can to add to her salad and asked if I wanted to try it. I said HELL NO but she worked on me relentlessly, “of course”! I’m adventurous like that
I liked it! It tasted like canned tuna and has a stellar nutritional profile- high in protein, Omega-3 fatty acids, B-12 and vitamin D. I would definitely eat it again. SHOCKER
Most of the afternoon was spent soaking in the last hours of sun and surf. I even managed to get in the frigid water and boogie board. Fun times!
Afternoon snack – sweet honeydew…
Our last night ended with a pool party and bbq …
I loaded up with salad, chicken and a delicious pasta salad…
I nibbled on some cashews and pretzels throughout the evening. And danced the night away…
Glow sticks, Electric Slide, Conga line and all.
Best vacation ever
Have a great day, everyone!
What and where was your best vacation ?

My best vacations were spent wilderness canoeing and camping in the Boundary Waters area between the USA and Canada. Paddle a canoe for 8 hrs every day, portage the canoe and your gear past the assorted rapids and waterfalls, primitive camping and surrounded by nothing but beauty and wild animals !
Sardines- my hubby takes them 3 ti,mes a week for lunch. I can’t eat them because of a fish allergy, but I used to love em !
Best vacation is the year we hiked the Grand Canyon(took my breath away) and all 5 National parks in Utah. It was the most I have ever hiked but saw some of the most incredible sights I have ever seen.
Yay for liking oats and yay for a 7 mile bike ride! I love running into races like that and cheering people on.
My favorite vacations have always been the ones to New Orleans. I so love that city.
That looks like so much fun! Every vacation that I get to be near the ocean is my favorite vacation.
Looks awesome!
I actually just got home from my best vacation- we went to Mount Desert Island in Maine. It was unreal.
I’m so glad. Hope you have a great time.
I love the glow band head gear, lol!
Looks like you had such a great time!!!
My favorite vacation as of today is my honeymoon – 1 week cruise to the Western Caribbean – it was just incredible.
Hey Dancer-Biker Chick,
Awesome!!! What a great time this sounds like it was!! And – so cool you took the time to cheer on the racers!
And…I LOVE PB!!!
I saw your mention on FB about you and your dad and the ride.
I LOVE how active you are with him—I wish I had that and want to work to create that for MY daughter.
I have to say a trip to Tennessee biking with my dad was one of my most memorable vacations. No joke!
Your vacation looked like so much fun! You’re so inspiring! You splurged but yet didn’t go overboard… that’s a lesson I need to take for vacations!
that laughing cow cheese flavor sounds awesome, must try that now!! looks like you had such a fun time on vacation, i haven’t done the electric slide in so long!!
That looks like a ton of fun! And you guys matched. Awww. Hehe.
My best vacation was with my mom in Gatlinburg, TN. We never get to go away alone so I treasured spending time with her. And we were really active so that was fun!
I need to find that laughing cow cheese – I haven’t seen it!
I have never tried sardines although my husband keeps pestering me to try them – I can’t get over their looks – although I know how good they are for you.
Good for you for being brave.
It looks like a wonderful time was had by all! My hubby likes sardines, I have to say I have never tried them. Maybe I should, but the smell really turns me off!
We have had some incredible vacations and I couldn’t choose one as the best but a trip to Austria and Italy does rank close to the top!
Marisa, love the matching shirts for you and your dad. I love that you can do that together! Your vacation looks great!

Looks like you all had a wonderful time…great vacation!
What a fun day! I’d have to say, my best vacation ever was in Tarifa, Spain. It was a surprise to us because we were in Germany visiting my daughter’s father and he surprised us with a week in Spain. I can’t exactly put my finger on why but I just loved it there. I just felt at home (which is weird because I’m about as Spanish as a perogy which is to say: not much!). But it was lovely. I’m sure running along the beach every morning helped too. Just like you said, exercising on holiday can elevate a good trip to a great trip!
I am still on the eewww with the sardines! Glad you are more adventurous than me!
We rented a house in Door County once, and not one but races passed by our house each Saturday we were there – and it was on a tough uphill climb so my daughter and I were cheering our hearts out for them!
But our favorite vacation was in Tennessee – we rented a pontoon boat and just would boat, stop, swim, repeat!
i gotta get that new laughing cow flavor – it sounds great!
best vacation ever was safari in botswana. i already know nothing will ever top it, so i don’t even try!
what a great trip! i just recently found that laughing cow flavor. i like it! well, relatively speaking…for some reason, i just CANNOT get into LC which is such a bummer! but i am definitely liking this one best of all that i’ve tried.
I’m hoping my best vaca is yet to come…going to Egypt this fall!!
wow, i’ve always been a disaster with the Conga line. (don’t ask me why!) my best vacation would have to be in Fiji when we got married! (i know, life is rough.) but on a normal basis, i love touring the wineries in Australia. i’ve been to regions in every state except Tasmania (still on the list.)
