Slim Pickings
I have to say that this….
is not anywhere near as fun as this…
I daydreamed of ocean breezes while cranking out 35 minutes in my dingy basement. It certainly was an exercise in visualization!
Thankfully, I didn’t have to visualize a delicious breakfast. Although, the pickings were slim since I hadn’t gone to the grocery store yet, I had the makings for an egg white and cheese on an Ezekiel english muffin…
Always good!
I got the after-vacation lazies and poked around the house most of the day. Haven’t even unpacked yet!
I had a strong craving for pasta, so I decided to make some for lunch. I dug around in the bare bones cabinets and came up with this mix…
Hmmm. What to do???
Take 1/2 cup of each of these…
Mix together…
and add to cooked pasta…
Not too bad for a slim pickings stash!
I made it out of the house later and headed to the supermarket to restock. Good thing since I invited Gram for dinner! I had a fun meal in mind – Chicken Cheesesteaks, Oven Fries and simple green salad…
I thinly sliced boneless, skinless chicken breast and cooked it with a little olive oil, green peppers, onions, s +p. Added some cheese and served it on an Ezekiel hot dog bun…
Along with Oven Fries made with russet potatoes cut into wedges, drizzled with olive oil, seasoned and baked at 425 degrees for about 40 minutes…
It was one carb-tastic day! Gotta get my green on tomorrow. And unpack

Do you unpack immediately upon coming home from vacation? I have been know to live out of my suitcase for a week after vacation!!! I just hate letting go…

I drive my husband crazy because I start unpacking about 5 minutes after I walk in the door ! An hour after I am home it looks like we never left. For some reason , I cannot relax unless I have everything unpacked and put in it’s place .
Unpacking? No, not so good at that. I leave the bag on the bed in the spare room and unpack it as I go. Hubby unpacks his bag as soon as he’s in the door.
HA! I got home late Saturday night… and I have washed all of the dirty clothes… but everything else is still in the suitcases. I told myself I must unpack it all tomorrow… we’ll see if it happens
I hate unpacking. I have started doing it the MINUTE I get home because if I don’t, I can live out of a suitcase for weeks.
On a good day, I unpack right when I get home. But more often than not, the suitcase is still sitting out a week later.
We usually put all the dirty clothes in one suitcase so when we get home we wash them and the clean clothes stay in the suitcase for at least a week. LOL!
I unpack immediately. Like I walk straight in the door and head to the closet, laundry room, wherever. I simply can’t relax until it’s done. I’m a little OCD that way.
That chicken cheese steak looks yummy!
I am totallly anal when it comes to after vacation. I can’t relax tilit is all put away and at least the washer and dryer going. I know it’s crazy but there is just something inside me that says “you have to do it NOW” Glad you had a wonderful vacation!
I believe my bag from my July 19th Vegas trip is still packed! I did take out the dirties though.
Your food always looks GREAT!
I think you did well with creative meals using what you had on hand!
I usually unpack right away, can’t stand the clutter of suit cases open and around!

yeah, i know the feeling…i just unpacked this past weekend from my trip two weekends before…crazy, right?! i love your carb-y day. those are the best kinds of days i think!!
I HATE unpacking. I’ve been known to leave stuff in a bag for over a week…but, I’m trying to do a bit better. When we went to Sesame Place I actually unpacked the night we came home!
I’m going to have to try that chicken cheesesteak idea – yum!
I still haven’t unpacked EVERYTHING from my vacation, and I got back on July 17th!

ooo i just bought that penne at TJs in arizona! cant wait to try it. love your thrown together meal. ha.. i have moved and gone on two trips all within the past 3 weeks and i have not unpacked from ANY of it! im horrible.
I don’t unpack mine, lol. I am usually so exhausted from the trip back, that I don’t do it.
Well I unpack the dirty clothes right away, but the clean and the other stuff lingers in there for a while

hehe it sure doesn’t look as much fun! That pasta looks fabulous!! Honestly, I don’t even sit down until i’ve unpacked, put the toiletries back in the shower, plugged in the blowdryer, started a load of clothes and put my (now-empty) suitcase in its space. I can’t relax until normalcy is restored!

you’re so right – a stationary bike can not compare with the outdoors
i usually start unpacking the moment we step in the apartment, start doing laundry and such. we have a really small flat and if it’s left a mess you REALLY notice. aw! too bad vacation couldn’t last forever…. 
I used to be one of those live out of the suitcase for a while. In the last few years, I unpack the minute I get home so it will be done and I won’t be tempted to leave the suitcase out (hence avoiding tripping on it in the middle of the night).
