The Apocalypse

Waffle fun continues!  Who doesn’t love a Waffle Sundae for breakfast?

IMG_8000

A Clean Eating Brownie Waffle topped with banana “ice cream” (or soft serve as it’s known around the blogosphere) and sliced almonds…

I added a 1/4 cup nonfat greek yogurt while processing the frozen banana to up the protein content.  It came out great!

I enjoyed my Waffle Sundae with a cuppa press…

I’m sure having a good time with breakfast lately :D

Lunch was not so fun.  I spent a good 20 minutes staring in the fridge and freezer trying to decide what to eat.  It was taking so long, I started to get to that overly hungry point where I knew I would start grabbing anything that wasn’t nailed down!  I hate that indecisiveness!

I finally settled on another Spicy Chipotle Turkey Burger.  I made it “wrap-style” (well, really “bundle style”) using a La Tortilla Factory tortilla .  Toppings included baby spinach, Laughing Cow Queso Fresco Chipotle cheese wedge and salsa…

IMG_8012

I bundled it all up and devoured it along with a side of carrots…

IMG_8013

In the afternoon, I had a small encounter with some Pita Chips…

IMG_8020

I put them back before things got way out of hand.  Feeling good about that.  In older days, the bag would have been MIA ;)

The remainder of the afternoon was spent shopping for back-to-school supplies.  I like to call this The Apocalypse trip.  It is generally an epic disaster filled with screaming (me), incessant talking, begging, shenanigans and time-outs in the middle of the store (little daughter) and indifference coupled with offering to be adopted into another family (big daughter).  After going to 87 stores (why is rubber cement so hard to find and who the heck still uses that stinky stuff?), we came home with the loot…

IMG_8022

Actually, that is only little daughter’s loot.  Big daughter had already put hers away as soon as we got home.  Obviously, she did not inherit my procrastination gene.

It was a spectacular afternoon…

IMG_8032

Needless to say, I was in no mood to cook dinner.  After more rifling through the freezer, I decided to eat this…

IMG_8024

Potatoes and veggies for dinner don’t sound too fabulous, but these are fancy!  The bag even says so…

IMG_8027

I cooked them along with a big handful of baby spinach and served it with a fried egg on top  …

The end.  :)

Have a great day, everyone!

Do you think it’s wrong to drink alcohol while shopping with children?  It would sure make it more fun, don’t ya think? ;)

Okay, I know that’s not a legitimate question.  Tomorrow’s will be better!

Hugs !!! As to the rubber cement, part of the reason it is so hard to find now is that it is one of the things kids use as an Inhalant, believe it or not. It is still the adhesive of choice for many who do paper crafts like scrapbooking, and you can usually find it at office supply and craft stores pretty easy. We use it for our homeschool with something called lapbooking , and I buy the stuff by the quart can now. For what it’s worth , this week we are having our first state wise tax holiday on school supplies, shoes and a few other things. This, combined with a coupon led me to take my son shoe shopping yesterday. He has a weird, hard to fit foot but a desire to look cool and no body makes Spongebob squarepants shoes (or whatever) in men’s wide width sizes. The results were the same as for your trip. Happily shoes were found and I just kept thinking of a tropical beach somewhere with cabana boys serving me cold drinks …and duct tape on their mouths so there would be no complaints !

LOL I don’t have kids, but I think this IS a legitimate question. I come from a family who likes their nightcaps… and daycaps? This may have happened in my family before. ;)

I’m glad to know you “lose” it every on in awhile! Your pics and portions are always so perfectly controlled. Thanks for being totally honest.

As for alcohol, children & shopping, I don’t even HAVE children and am tempted to drink when I’m around them in Walmart! It’s fun to just hide and watch the back-to-school bedlam.

I always LOVED back to school shopping! Probably why I still hoard pretty pens and paper even now. This makes me want to ask my Mom if I was awful on those trips! LOL!!

I love school supplies but I can only imagine the grief I caused my mom when shopping for them! Btw, I think it’s perfectly acceptable to drink in these circumstances…this is one of them and so is shopping the day after Thanksgiving!

I am a long time reader of yours, not sure if I’ve commented though, certainly not in a while…sorry ;) I am really amused by your humor in this post. I have three kids and I’m not looking forward to our “Apocalypse Trip” either. I’ve considered taking them one at a time but that might just prolong the agony. Getting it over at once, like when I had my 4 wisdom teeth removed, is the way to go. After the first trip I may never want to go back.

I love me some good banana soft serve. (I had it yesterday!) :-)

That breakfast looks so freakin’ good!
It’s hard to believe just how important the right folder can be, isn’t it? LOL
Remember Trapper Keepers? Do they still have those? That was the big thing back in my school days…

LOL! YEP! I look forward to the school year starting just because I no longer have to take them with me. I loved what you did with your Laughing Cow Queso Fresco Chipotle cheese wedge.

LOL! Back to school shopping is a mother’s challenge. This year I am helping my daughter get ready to study in Spain for the next year! Talk about a challenge. I nearly collapsed last night for shopping exhaustion!

ng done before the hoards get doing it – the kids can choose a couple of ‘cool’ items each and then the rest is just the regular stuff on the list.

Great job on putting those pita chips back :)

So that picture of you with your hand on your head, hysterical. And the dinner your made, the potatoes with egg on top, oh, my gosh, I just want to come live with you! You make the greatest dishes!

Ummmm… in case you didn’t notice, you accidentally dropped an egg on your dinner.
