Running In The Rain

I woke up to rain!  Normally this doesn’t trouble me, but today I had to run in it!  I debated on waiting or going.  I had a feeling if I waited, it might not ever happen, so I decided to just go. 

Even though I think running in the rain is yucky…

When I got started, it was only drizzling so it wasn’t too awful.  I popped in my earbuds and sloshed off  while listening to the Two Fit Chicks and a Microphone podcast on Intuitive Eating.  What a GREAT podcast!  If you haven’t checked it out yet, please do.  It’s excellent. 

I really got lost in the moment while listening to this and before I knew it,  I was halfway into my run and it wasn’t raining anymore. I finished out my 4 mile run with some tunes and feeling strong with the 4:1 intervals on the GYMBOSS

Just as I got to the house, it started to really rain!  Whew, made it in time…

My hunger didn’t kick in for a while.  I got mildly hungry about an hour after the run, so I had half a Buttermilk Pumpkin Waffle (going to play with this before sharing) with a smear of almond butter…

Lunch happened pretty early – a wrap with turkey, light havarti cheese, spinach and pickle…

along with carrots and a few (yes, a FEW!!  WHOOO HOOO!) Lundberg Rice Chips

I like these chips a lot.  They taste terrific, with just the right amount of salt and are a very sturdy chip that would hold up well for nachos or dipping.

Afternoon snack was a gala and cheese…

It was taco night for the family tonight, but I was in the mood for something different.  Greek food has been on my mind!  I happened to have all the makings for Spinach Pie (Spanakopita), so that was the winner.  It’s really easy, too.

Guess who else ate this?  Little daughter and the husband!  After eyeballing my piece, they went and dug in to the dish.

They make me crazy.

Big daughter fully enjoyed her taco night.  I love  her :D

Weekend Highlights

HI!!!  Did everyone have a good weekend?  Mine was busy and fun! 

Some of the highlights…

Number one:  Pizza night!

We are completely hooked on making our pizzas on the grill.  No one wants takeout pizza anymore.  Aaah, my work is never done ;)   But, since it doesn’t take long to make and we can control exactly what we want on our pizza, it’s worth the small effort.  If you missed it, I posted the tutorial on How To Make Pizza On The Grill and my sister in another life, Jenn is also hooked on the grilled pizza and kicks it up a notch with her homemade pizza dough!  Definitely check that out.

 Number two:  Running with the husband!  I had 5 miles on the half marathon training schedule this Sunday and my running partner was busy celebrating her birthday (Happy Bday, Kerry!),  so the husband said he would run with me.  I was so excited!  He doesn’t have a love affair with running, but does run short distances once or twice a week as part of his exercise routine.  We had a great early run and now I was able to convince him to run the Atlantic City Marathon’s 10K with me on October 17th!  We had planned on being at the shore for an overnight anniversary trip that weekend, so it was a perfect chance.  What he won’t do for loooooooove ;)

I did great all weekend with listening to my body and being satisfied with less.  I’m really tuning in and although it does take conscious thought, I’m discovering a lot about how my body works, how my mind tries to sway my body to eat more and how important distractions from food/eating are.  This weekend left me feeling more empowered and hopeful that this can be a natural state one day!

I’ve got a crazy week ahead, so posting might be sporadic.  Just know, I’m here… still doin’ my thing and I’ll be checking in when I can this week :)

How To Make Pizza On The Grill

Friday night pizza has been taken to a new level!  The key is using a baking stone.  It heats up inside the grill helping to bring the temperature similar to that of a commercial pizza oven.  The crust gets crispy while the cheese gets perfectly melty.  A match made in pizza heaven.

Since we’ve been making pizza on the grill there is no more need for take-out!  And the whole shebang is ready in less than 15 minutes.  Beat THAT pizza guy ;)

Here’s the how –to:

First, break out the grill…

Before turning it on, place a baking stone in the center of your grill grates.  Mine is from Pampered Chef, but any brand will do…

Fire on all cylinders!

Close the lid and heat until it’s at least 500 degrees (this takes about 5 –7 minutes)…

Meanwhile, get the lazy girl’s dough out…

Or use your own if you’re an overachiever.  Show off ;)

Roll out the dough on a lightly floured surface…

Now, you need a pizza peel…

Well, you don’t NEED one, but I highly recommend it.  It makes sliding the pizza onto the hot baking stone much easier.  If you don’t have one, a flat cookie sheet without rims will suffice.  Make sure to sprinkle a good amount of cornmeal or your dough will stick!

Same goes for the peel…

Place rolled dough onto peel sprinkled with cornmeal…

Now, get creative!  I opted to make a Caprese Pizza using fresh roma tomatoes and light string cheese!

Thinly sliced tomatoes cover the dough…

Then get decorated with slices of string cheese …

Sprinkled with shreds of fresh basil and seasoned with kosher salt, pepper and a drizzle of garlic oil…

Time to grill!  Carefully and quickly slide pizza onto the hot baking stone…

Whew… made it…

Close the lid and stand by the grill!  This takes less than 5 minutes to cook!
