Burritos, Burgers And Beef

I slept like a log last night!  Must be the cooler air.  I was so cozy it was hard to get up for a run this morning.  That and the fact that I had 6 miles on the schedule!

The husband pushed me out the door and off we went to the local track.  We knocked out 6 miles in 1 hour 12 minutes and did the happy dance.  It’s so nice to be able to run together.  Can’t wait for our 10K race in 2 weeks!

Once home, coffee was my first priority…

I tooled around looking for something to eat, but nothing seemed appetizing.  I’m having trouble wanting to eat breakfast after a run.  I can’t eat much before or my stomach gets upset and it takes a long while after a run for my stomach to be ready for food.  I may have to try out smoothies again to refuel, but part of me is just focusing on my hunger cues right now and letting food happen when it feels right.   I ended up nibbling on a Larabar and heading straight to lunch.

This was very appetizing!

A Beef and Cheese Burrito using leftover taco meat, light cheddar, spinach, lettuce and guacamole in a high fiber wrap with a sweet Gala on the side.

Tasty…

And a little more sweet – 72% dark chocolate…

I could possibly live on that forever.

There was more beef on the menu for dinner.  When Kelly posted about the Best Old Fashioned Burgers from America’s Test Kitchen a while back, I couldn’t get my mind off them!  I made them one weekend and the family went nuts over them!  Sometimes I give them a break from the torture ;)

I invited my parents and Gram over to try out these famous burgers, tonight.  I healthified them a little by topping them with 2 % cheese and serving them on whole wheat buns…

Outrageous!

Baked sweet potato fries and salad finished out the meal…

Of course, we had an abundance of desserts!  I was pretty satisfied with my meal, but had to have a small taste of my Mom’s Apple Slab Pie along with vanilla frozen yogurt…

And I’m good.  Peace out, pie!

Have a great day, everyone!

What is your favorite kind of pie?

Wow, your food looks delicious!!! I have a hard time eating after hard workouts too. I just don’t want anything. Hubby on the other hand is starving. It takes me a good hour or two to get hungry. My favorite pie is pecan or coconut creme. Yum!

That’s exactly how I’ve been feeling after a run. Takes a while for the hunger to kick in.

I am not really a pie person, but if I had to choose, I’d go with coconut cream!

Cherry Pie, no question! For me, anything cherry. Do fried pies count??? LOL!

Have a great day, Marisa!

I could live on chocolate and coffee. I know I could. And I want to try.

My favorite pie? I’m going with apple and I’m sticking to it!

Marisa Reply:

I want to try, too! I think we could do it…. but we might need some apple pie, too ;)

Great job on your run!

I am a big fan of blueberry pie – I used to make it with my grandmother in Maine and have such great memories of it.

Marisa Reply:

So nice to have that memory!

How awesome is it that you get to run with hubs?!?!

Try chocolate milk after your runs! It is my fave post-run fuel! I can get that quick and down long before I can think of food!

Great idea, Jen!

I love that your hubby has been running with you–so sweet! My hubster and I just recently started exercising together too. First it was power-walks and tonight we did a little jogging too. It’s so nice! That burger looks evil in the best way–must check it out! Favorite pie? Dude, I can never pick any favorites among any desserts. Desserts are my downfall and I’m pretty sure I’d sell my soul for any of them if threatened with a future with no desserts.

in a totally not weird way I LOVE your dynamic and relationship with your husband

I know its work—it always is!—but I love it.

Oh those burgers. Now I’m wanting one.

My favorite pie has to be chocolate meringue. Or pecan. Or pumpkin. Or coconut cream. So many to choose from. :)
