Square + Round
Howdy! My house has been a revolving infirmary. First, the husband, then little daughter and now big daughter. My MIL and Mom are sick, too! Seems like yucky colds are making the rounds.
I have donned my hazmat suit. The yucky will.not.get.me.
In other exciting news…
Yesterday, I did my first run since the half marathon! It was a nice, light run and all felt well. I pulled the intervals back to 5:1 instead of 8:1 and it was just right. I finished up 2.38 miles in 30 minutes. I think I’m ready to do a little more, but I right now light runs a couple times a week are perfect.
This morning, I hit up the stationary bike in the basement. Snore. I do not love the stationary bike. I pedaled, I read, I got the heck off.
Then, looked forward to breakfast – Baked Oatmeal…
Basic Baked Oatmeal
- 2 cups old-fashioned oats
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 cup skim milk
- 1/2 cup nonfat greek yogurt
- 1 egg
- 2 very ripe bananas, mashed
- 1 tsp. maple extract (or vanilla)
- Preheat oven to 350 degrees.
- In a large bowl, combine oats, baking powder, cinnamon and salt.
- In a separate bowl, combine wet ingredients. Add to oat mixture. Stir until fully incorporated.
- Coat an 8 x 8” pan with nonstick cooking spray. Pour mixture into pan, spreading evenly.
- Bake for about 35-40 minutes or until golden and set.
Makes 4 large servings.
*note – this baked oatmeal is not sweet despite the ripe banana. If you like a sweeter oatmeal, you can add 1/4- 1/3 cup brown sugar or a sweetener of your choice and/or diced fruits.
I like the “blank slate” quality of this baked oatmeal and the firm texture…
It’s a great base for PB2 icing!
Lunch was just as square. I whipped up another Zucchini Bake; this time using mozzarella cheese instead of swiss and subbing diced red pepper for the onion. YUM!
Served with a side salad…

Later in the afternoon, I put up exactly 3 Christmas decorations before declaring it exhausting and went for a snack instead…

Round and round…
Dinner was courtesy of Clean Eating Magazine. I remembered making Individual Chicken Pot Pies some time ago and thought they would be a good way to use up the leftover turkey that is multiplying in my fridge. I pretty much stuck with the recipe other than subbing turkey for chicken and leeks for the onions…
Topped with whole wheat biscuits…
An easy and comforting meal…
Off to comfort the sick…. *sprays Lysol while exiting*

Ahhhhh I missed the half marathon congrats lady!!! Your food looks sooooooo good!! Yum! I hated the stationary bike with passion when I first started with physical therapy but I have come to love it. I actually look forward to it and seeing how far I can go or how fast I can do 10 miles. I was just happy to be allowed to do some kind of activity but I think its going to be a permanent part of my without now

Congrats on the marathon, and hope the bugs miss you ! When I get sick I crave ice water and tea- I think it was because of so many bouts of Tonsilitis and ear infections as a kid ! Cold and or wet just felt good, and the same holds true today for me.

I crave mac n cheese daily. Wrong…so wrong.
You have such good food ideas! The only time I like hot tea is when I have a sore throat. Otherwise I usually don’t drink it.

oh nooo…cooties!! Stay safe over there! Love all of the EATS! I love baked oatmeal- I make mine even plainer (plainer is a word?? lol) I love chicken pot pie and we usually do chicken & biscuits like that too.
When I am sick I crave saltines…no, not just a few, or a sleeve, the whole 4 pack. :-/ I also like won ton soup from the local chinese restaurant.

I like the baked oatmeal plain, too so I can add fun toppings to it!
So who has the bette crocker apron !!! Can I come for dinner , or lunch, or breakfast… This stomach virus is brutal..we all had it..better watch the roughage…..

I usually don’t want anything at all to eat when I’m sick. Sometimes I’ll crave a Filet-o-Fish from McD’s. Healthy, right?

I thought this was going to be about how you were trying to fit a metaphorical square peg into a round hole. LOL! I used to make a sweeter baked oatmeal a lot but it was even more basic, without even bananas! I recently have made baked pumpkin pie oatmeal and baked banana oatmeal with agave nectar for sweetness and I’m in love with them both. When I am sick, I just want hot stuff to warm me up. Doesn’t matter what as long as there’s lots of liquid in it, broth, tea, soup.
IM MAKING THAT OATMEAL!!

I love the baked oatmeal idea! It reminds me of oatmeal squares I used to make, but it is a bit healthier, always a good thing… Sorry to hear the winter colds have hit you guys, hope everyone is feeling better soon!

I just made your baked oatmeal today! So good! I added a bit of agave for a bit more sweetness, and then topped it with coconut butter when still hot….and the coconut butter melted wonderfully all over it! So good!

Chobani Greek Yogurt
