Waiting And Wigging
Thanks for the nice comments about my new toy! It was an early birthday present from the husband. He picked it out all by himself, went to get it and then couldn’t contain himself and had to give it to me! I’m so excited and can’t wait to ride it! I don’t live in a very bike-friendly town (too many winding roads and no sidewalks or bike paths), so I’ll have to look for some bike trails in the area to take her for a spin. But, she’ll be getting lots of use at the beach! Fun!
So, I was in the mood for something a little different this morning. I decided to try out Breakfast Quinoa again…
In the mix…
- 1/2 cup quinoa, rinsed
- 1 1/4 cup plain soymilk
- 1 banana, divided
- 1/8 tsp. maple extract
- hefty dash cinnamon
- 1 tsp. agave nectar
- sprinkle unsweetened reduced-fat shredded coconut
Bring quinoa and soymilk to a boil. Add in 1/2 banana in small pieces. Reduce to simmer, cover and cook about 15 minutes or until quinoa is tender and most of liquid is absorbed. Remove from heat; add extract, cinnamon and agave. Stir until incorporated. Serve with remaining banana and coconut.
This made a hearty portion! I ended up only plating half and saving the rest for another breakfast…
Very yummy! A nice alternative to oatmeal.
Other than errands and household stuff, I didn’t get much exercise. My knee and back are acting up and it’s wigging me out a little.
There will be NO GIMPYNESS eleven days before a half marathon!! NONE. NADA. ZIPPO.
So, I rest and hope wish, pray or sell my soul to the devil, whichever works best it will all go away.
And I eat.

Things got pretty cheesy in the afternoon. GF mini cheese crackers and a lite string cheese…
And stayed cheesy for dinner!
Trader Joe’s makes a great gluten-free boxed mac n’ cheese…
I served it with leftover roasted butternut squash and sauteed fresh spinach…
*Fingers crossed* for my run tomorrow. I have 5 miles on the schedule, 12 miles planned for Sunday, then start my taper week. If anything feels wonky during the run tomorrow, I’m cutting it short. I really don’t want to mess myself up before this half. I am so ready to do it!!

Good luck with your run….I’m cheering for you!
I love, love LOVE quinoa !! I eat it as a warm side, use it in salads ( subsitute it for and rice in a rice type salad) and have even used it to make a poultry stuffing. I have had it as a breakfast cereakl in the past and totally forgot about it ! Quinoa is also a low carb friendly grain that is high in protein and fiber. Good luck on your run !
I like quinoa a lot but have never eaten it for breakfast. I’ll have to give your recipe a try!

Marisa, take care of yoursel fand rest. That’s what I say. You’ll finish the half marathon regardless of how much you run in the next 11 days. You’ve progressed far enough at this point, and you know you can do it!
That quinoa breakfast looks great. Yum. Have to do some searching for that coconut in the stores. Sounds like it could be a good addition to a lot of things.

I think you’re right, Reen. I may seriously scale back until next week.
I love your new bike! (and might be a lil jelly lol) I want a bike that I can sit upright on so my back wont burn when I ride!
But I also dont wanna leave a nice one outside- so maybe soon!
I like quinoa- never tried the breakfast version. Looks good!

The cruiser bike is the way to go! It feels really comfortable for my back, too.

I am going to stick with 8:1 for the half. It worked well for the 10k, so I’m pretty comfortable with staying for the half.
Wow, nice bike!! I have a bike but rarely ride it. It’s so hard for me!
I am afraid of Quinoa! My cousin made it for me once but I’m afraid to make it for myself! lol

I like quinoa – it’s quite versatile!
I LOVE quinoa. I love it with mushrooms and onions as a side for dinner. I never thought of it in a breakfast dish. I’ve also used it to make stuffed peppers w/ quinoa, grd turkey, tomatoes and onions..very yummy
I love that TJ’s has gluten free mac n cheese! Good old TJ’s. Also, your new bike looks spiffy, happy (almost) birthday! I hope you feel tip top again soon…
Love quinoa but never had it for breakfast, I’m not a hot porrage person
I recently bought a box of the red one from Trader Joe’s but haven’t tried it yet.
I like quinoa, but found out the hard way back in the spring, that it doesn’t like me.
I can tolerate it in small doses, but not more than 1 serving a week or it causes me to have allergic reaction
I like it and I make a great hot breakfast bowl with apples. It is also good used like couscous or rice, good both savory or sweet.
