Weigh-In Bust
So glad you guys liked the salad kits! They are really convenient to have and I’m already planning some new combos for next week’s lunches! Planning ahead has never been my strong suit, but I notice that it does help me stay on track. So, I will try!
We had another snow storm last night! Many of the roads were cleared so I braved the cold early this morning and headed to my WW meeting. It was closed! I waited, with about 6 other members, however, no one came to open the center. Bummer! Looks like I’ll have to go back tomorrow for my first week’s weigh-in
Once home, I whipped up breakfast – Cheesy Ham and Veggie Quiche (6 PP) and strawbabies…
Cheesy Ham and Veggie Quiche
- 4 large eggs
- 1/2 cup egg whites
- 1/2 cup nonfat Chobani plain yogurt
- 1 cup lean ham, diced
- 3 oz. cheddar cheese, grated
- 1 cup fresh spinach, torn into pieces
- 1/4 cup red onion, diced
- 1 cup red bell pepper, chopped
- s + p
With a wire whisk, beat eggs together. Add yogurt and whisk until yogurt is incorporated. (*works best if eggs and yogurt are at room temperature). Stir in remaining ingredients. Coat a baking dish with nonstick spray. Bake in a 350 degree oven for 35-40 minutes.

It was so cold and blustery outside, all I could think of was soup! Lunch was 1 cup of Trader Joe’s Organic Creamy Tomato (3 PP) and roast beef on Ezekiel bread with baby spinach, red onion and a new tasty find – Annie’s Horseradish Mustard…
I know… I’m into the mustard thing lately
Heated me right up…

I’m easy to entertain like that.
Dinner was Breaded Turkey Cutlets (7 PP)…
Along with sauteed spinach in garlic oil and leftover cucumber salad (4 PP)…
Going to end the night with some decaf press! I’ll be back tomorrow with weigh-in results and thoughts about my first week on program.

You know I’m thinking of you as you go for your first weigh-in this morning! And that quiche looks really really good. I used to make one all the time that was similar, lots of veggies and I used fat-free feta in it. Can’t find the recipe. So I’m going to try yours this weekend. The yogurt sounds like a good addition.
I went thru at least 3 bags of cuties myself!
I am most obsessed with berries right now. I am freezing them and throwing them into smoothies YUM!
Having just gotten back from Florida, I’m totally obsessed with RED navel orange and RED grapefruits. Have a ten pound bag of both! It’s hard to find the RED varieties in Tennessee even in season.
I’m addicted to clementines right now too. But I want to thank Sharon for her comment which reminds me that I have two red grapefruits in the refrigerator drawer!
I made more scones yesterday from your recipe. They are quite a hit here in my house especially with a hot cup of tea.
Good luck today at WW. Just out of curiosity do you weigh yourself sometime before the weigh in or do you only weigh in at WW?

Aimee, I’m trying not to get on the scale until WI at the meeting. I did get on this morning before leaving though, just out of curiosity to see the difference between my home scale and WW’s scale. However, I decided from here out that I will not get on my scale at home. Having ditched the scale last April helped me cure the scale anxiety/obsession that I suffered from and I want to keep it from resurfacing!
Yum!!! I am so craving some tomato soup today!!! I actually haven’t had a Clementine I am so going to have to try them! Good Luck with your weigh in!
Definitely Clementines…two are sitting on my desk right now waiting for my 11A snack!

Yeah- that snow. I almost wanted to go to my gym because I felt bad that someone had to brave the snow to get it open. Then I realized that maybe that didn’t make it in and I would have traveled for no reason.
I am just obsessed with fruits in general. I love clems at this time of year, but I have been rocking red and green anjou pears for the last few months.
thanks for the quiche recipe! i was thinking about making one on sunday and eating it for lunches all week. i have artichokes and goat cheese and sundried tomatoes and possibly chicken sausage in mind though; hopefully my randomly pieced together recipe will work okay!!

Oh mans! That happened to me too when me and my hubs were members. We battled the horrible roads like crazy only to get there and discover a sign in front that said they were closed due to the weather. It was so disappointing. Good luck with your weigh-in tomorrow! Right now I’m currently obsessed with Frito pies. No fruit allowed on my frito pie diet.

What a bummer about your WW class! I too love those cuties and also right now black berries, pears and frozen cherries.
After our trip to florida I was eating starfruit as I brought 2 big bags back fresh off the tree and I have been obsessed with persimmons.
DD is obsessed with cuties
I was planning to go WI today as we are out of town for the weekend so I will miss Saterday but with all the ice not chancing it!

That quiche recipe is wonderful!! I made it yesterday and had it for dinner with a salad. Where did you get this recipe? Will you you be posting more like this soon?

Glad you like it, Jane! I based it on a fritatta (Italian omelet) and just threw some greek yogurt in for even more protein. Since you liked that recipe, you might want to check out my Zucchini Bake. I’ve gotten a lot of positive feedback on that one, too!
