The Unveiling
Hi!!! Hope you all had a fabulous weekend!
After a great night’s sleep, I only had one thing on my mind this Sunday morning…
Pancakes!
Normally, pancakes are not my choice for breakfast. They just don’t stick with me and I end up starving an hour later! But, thanks to Janetha for reminding me about Protein Pancakes! I used to make these when I did the WW old Core Program and I really liked them! After seeing Janetha’s post this morning, I headed right to the kitchen to whip some up…
Protein Pancakes
- 1/2 cup old fashioned oats
- 1/2 cup cottage cheese ( I used 4% fat)
- 1/2 cup liquid egg whites
- 1/2 tsp. vanilla extract
- 1/2 tsp. baking powder
- 1/2 tsp. cinnamon
- dash salt
Place ingredients in blender. Blend until smooth. Let batter rest for about 5 minutes (*helps make a fluffier pancake*). Heat large nonstick skillet over medium high heat. Coat with cooking spray, then using 1/4 cup measure, pour batter into skillet making pancakes about 4 inches in diameter. Cook until golden and flip.
Makes 6 pancakes. Each serving (3 pancakes) is 4 PointsPlus.
I topped my stack with a “blueberry syrup”. I placed 1/2 cup fresh blueberries in a microwave safe dish and nuked for about a minute or so until the berries released their juices, then added 1 tsp. agave nectar for a little extra sweet ( 1PP)…
That’s a good start to the day!

Then we were off to big daughter’s basketball game where we hooted and cheered like crazy people. She will most likely wear a disguise to school on Monday.
It was a great game that ended up going into double overtime! I was exhausted. Cheering is hard work.
Once home, I needed lunch, pronto! Quickest thing that popped into my head – sandwich. This is why I need to make more salad kits! When I don’t have them handy, I go right for the plain old sammie. I jazzed it up a little today… Grilled Turkey Pepperoni, Mozzarella and Spinach (7 PP)…
Along with super sweet pineapple (love!)…
The weather was so spectacular, we decided to go for a family walk. Well, the husband and I walked; the daughters rode…
We walked about 3 miles! I forgot how much I enjoy just walking sometimes. I even ran a little to catch up with the daughters. And I forgot how much I like that, too
Maybe I just need some good weather to get me going again!
We all had a fun time together. Even Rocky…..

Time to go home and get started on dinner. It was the perfect day for the unveiling…

Seems like it needs a little un-gunking, too. Oh well, I can work with it.
Grilled boneless pork loin glazed with honey barbeque sauce, mashed potatoes and roasted broccoli (11 PP)…

So glad I like coffee again
I like eggs a lot lately, too! Egg scrambles have been a good way to get some veggies in and a good protein start to the day. A little something special went in the mix today…
Only 3 PP for 2 patties…
I pan-fried them in cooking spray (not necessary since they are fully cooked, but I like them browned), then chopped them up, added egg whites, spinach and cheese.
Messy, but delicious 5 PP…
I was fueled up and ready to start my day…

It’s a hideously boring and tedious job but, somebody’s gotta do it.

During this quiet and pensive time, I was going out of my mind rudely interrupted by the sounds of snoring.

The nerve.
After most of my brain cells deteriorated, I stopped for some lunch. A quick taco wrap using leftover taco seasoned ground beef, 1 oz. cotija cheese, lettuce, guacamole, fresh salsa rolled into a La Tortilla Factory tortilla (7 PP). Okay, maybe not “rolled”….
More like shoved until it busted out.
On the side, a Cara Cara orange …
Back to painting
I knew I was really losing it when I started belting out Justin Beiber songs. It’s bad when you’ve resorted to the Beibs.
My blood sugar must have been sending me into delirious shock. Time for a snack (3 PP)…
Uh oh, she’s back….
In my next life, I’m coming back as Rocky.
Dinner was the usual pizza fanfare. As I said last week, I’m doing okay with ditching the take-out that the family eats and making my own. Pita Pizza is my new fave!
Served with a green salad tossed with olive oil and good balsamic vinegar. A great 8PP Friday night dinner…
With room for a little treat – another Single Lady Cupcake (this one I made with oat flour) topped with PB2 and sprinkles (4 PP) …

Little Angels
Oh Thursday night religion class, you give me a big, fat headache…
HA! I actually really like teaching the kids, it’s just hard to keep them in line for the hour and a half of class. I’m exhausted by the end of it! This old girl can’t keep up anymore
Okay, since my head is pounding, I’ll keep this post short and sweet!
The day started with a little yoga (and I mean little <—slacker!) and then breakfast – leftover Goat Cheese-Asparagus Crustless Quiche (5 PP)…
I had the extra 3 parked in the fridge and it reheated very nicely in the microwave. I definitely see more variations of these in my future!
Mid-morning, I felt hungry so instead of pushing it off, I had a snack – apple and string cheese (1 PP)…
and some press with milk (2 PP)…
Lunch was a simple turkey and cheese on a sandwich thin (6 PP)…
With a side of POPchips and pineapple (3 PP)…
A great combo!
I whipped up a late afternoon snack before heading out to teach the little angels…
Banana topped with PB2 (1 PP)…
And with a pounding head and not much energy left for cooking, I’m so thankful for leftovers!
Harvest Grains Vegetable Soup (6 PP)…
Now where’s that bottle of Advil… and wine….
