Defrosted
Our fridge went kaput overnight! Everything in the freezer was defrosted. Things like bread, veggies and frozen strawberries were frozen no more…
Thankfully, we have an extra fridge in the basement so I was able to salvage some things. I also made use of a nice size cooler …

After all the shuffling around, I whipped up breakfast. Defrosted whole wheat english muffin, double turkey sausage patties and 2% cheese (7 PP)…
I think I could’ve used some coffee this morning! Maybe my mojo is jumpstarted!
No time though. I was off to buy a new fridge. Cash registers chimed in unison around the world. Cha -ching, cha- ching.
Lunchtime choice was this defrosted guy…
Not really what I was in the mood for, but I didn’t want to waste it…
A boring though tasty 7 PP.
Along with a sweet fruit bowl…
Dinner was decided by another defrosted item – shrimp! The 1.5 pound bag in the freezer had come undone, but was still cold enough to salvage. It needed to be cooked asap!
I threw together Shrimp Scampi with Green Beans and Grape Tomatoes…
- 1.5 pounds large shrimp, peeled and deveined
- 1/8 cup olive oil
- 3 large cloves garlic, minced
- pinch red pepper flakes
- 1/2 cup white wine
- 1 tbsp. butter
- s + p
- 8 oz. thin green beans
- 1/2 cup grape tomatoes
- 1 tbsp parsley
- squeeze of fresh lemon juice (about 1 tbsp.)
Heat large nonstick skillet over medium heat. Add olive oil…
Drop in the shrimp…
and the minced garlic ( I like to grate mine into the pan)…
Saute for a minute or two…
Then, add the gusto! Red pepper flakes…
And vino…
They’re having fun in there…
Add the previously frozen but no longer green…
At the end, toss in a handful of grape tomatoes and 1 tbsp. buttah…
Finish with a sprinkle of parsley and a squeeze of lemon…
Dinner in less than 15 minutes! Maybe a defrosted freezer isn’t so bad after all
This meal made 4 servings (of which no one eats but me
) at 8 PP…
I bid adieu …
And welcome the new that’s coming tomorrow! I will toast to it with a few chocolates! It is Valentine’s Day after all

I don’t actually like seafood much but your dinner looked amazing. I unfortunately grew up eating all seafood breaded and fried and can’t seem to get over the during taste without it.

Oh no, sorry to hear about the fridge! I’m a big shrimp fan as well – I don’t eat much seafood, but I do love shrimp and lobstah with buttah, ha ha!

I love grating my garlic as well – my microplane is a very well used kitchen tool!
How frustrating! I would be SO SAD if that happened. You made the best of it though, and while it may have been boring the enchiladas look great! So does the shrimp dinner – i’m a huge fan of shrimp, prob my favorite shellfish!
I am so sorry about your fridge! I have had it happen and it’s the worst! Seafood, I love love love it! Pan fried mini point oysters are my favorite thing in the world!
Oh it sucks when the fridge decides to die. At least you were home when it happened and not on vacation somewhere. That would have been a fiasco.
I haven’t had shrimp in so long. Maybe it’s time to cook some up again.
My favorite seafood is a dish that I got at a restaurant in Kemah called Babin’s: grilled amberjack with lump crabmeat sauce. OMG. Like buttah.
Our old fridge (which wasn’t really THAT old) died twice last year – the second time, we finally bought a new one. It’s terrible to lose so much food – glad you were able to salvage a lot. Hope your new fridge works for a long, long time to come!
That freezer mess has happened to me, maybe more than once. You have such a good attitude, I get pissed off and grumpy. I hate wasting and I hate the mess. But, it was good to see how nicely you handled it, maybe I could learn a thing or two.

I grew up HATING seafood, but now I’m obsessed. That shrimp looks fab.
Of course it would go out on the day it’s warm! YAY for a new fridge though

Oh GRRR!!!!! Big DANG about the fridge. Stupid appliances when they break!!! On a bright note though, that shrimp dish looks incredible!! And the flower is SO pretty. Happy Day After Valentine’s Marisa!!
Way to salvage an amazing looking dinner from the unfortunate situation! That shrimp looks awesome. And having to dish out for a new fridge definitely deserves some chocolate to end the day!

What a bummer I hate it when stuff like that happens. A few months back I could tell our freezer was about to go so we ordered a new one to be delivered straight away!
I love seafood, shrimp, tilapia, salmon fixed just about anyway but fried!
Great job finding a use for all that food! Can you imagine living back in the days before refrigeration? Of course, no one would be eating shrimp that was in from the coast LOL.

Oooh, I hope you submit your recipe to BSI this week! I just did mine (I used my food blog link this time so you can check it out–I usually use my weight loss one) with a sweet and sour chicken recipe that had peppers and green beans in it. Your fridge still looks new, I’m surprised it broke! Course, maybe the newer ones break faster than older ones. I think ours will never die b/c it’s ancient!
