Sundays In The Kitchen – Chicken Cacciatore
Chicken Cacciatore is wonderfully easy Italian dish of chicken and vegetables braised in a tomato sauce. There are as many versions of the recipe as there are Italian guys named Joey. Today, I’m giving you my take on this rustic meal. It’s delicious and won’t have you spending all day in the kitchen!
Start with the chick chick (5 thighs, about 1 1/4 lb).…
Be not afraid of the thighs, people! Well, you can be afraid of MY thighs. The lumps and bumps are enough to burn anyone’s retinas.
However, these thighs are beautious…
and much more flavorful than plain, old chicken breast. They also are less likely to dry out in a braised dish like this. Try them, you’ll fall in love
Okay, now liberally sprinkle these beauties with kosher salt and pepper. Heat a large pot over medium heat and add one tsp. olive oil…
Add the chicken…
Yes, there is still some fat on the chicken. You can trim the excess if you like, but it renders during cooking, so no worries. Plus, we’re only using 1 tsp. oil for the whole recipe! A little fat is A-okay and tasty
When chicken is golden on one side, turn over to brown on the other side…
Remove chicken to a platter and keep warm. At this point, chicken is browned yet not cooked through…
Now, time for the veggies to jump in.
First, sliced onion (1 cup or 1/2 of a large onion)…
Cook about 3-4 minutes, until onion starts to soften. Then, add garlic (2 cloves, sliced)…
and the peppers ( 1 red and 1 yellow bell pepper, sliced)…
*This is where the variations come in – feel free to use any color pepper you like. I just happen to like red and yellow! Sliced mushrooms are a great addition, too.
Saute the pepper mix for about 2 minutes, then add the tomatoes…
Have a grand old time smashing the smithereens out of the tomatoes with a wooden spoon…
Whew. That felt good…
A little spice (about 1 tsp. dried basil)…
Time to invite the chicken back to the party. Nestle it into the sauce…
Get the party started (1/3 cup white or red will do)…
Put a lid on the noise, reduce to low and simmer for 30 minutes…
Meanwhile, clean up the hideous mess you left on the stove…
You think that’s bad, you should see the floor
Before you know it, dinner is done!
Makes 4 servings at 6 PP per serving. Leaving plenty of room for a big hunk of crusty bread to dip!

This looks delish, I only have chicken breasts this week, I’m assuming they’d be ok to use! It’s going on the menu this week, and next time I’ll buy the chicken thighs to try it again.
