The Unveiling

Hi!!!  Hope you all had a fabulous weekend! 

After a great night’s sleep, I only had one thing on my mind this Sunday morning…

Pancakes!

Normally, pancakes are not my choice for breakfast.  They just don’t stick with me and I end up starving an hour later!  But, thanks to Janetha for reminding me about Protein Pancakes!  I used to make these when I did the WW old Core Program and I really liked them!  After seeing Janetha’s post this morning, I headed right to the kitchen to whip some up…

Protein Pancakes

  • 1/2 cup old fashioned oats
  • 1/2 cup cottage cheese ( I used 4%  fat)
  • 1/2 cup liquid egg whites
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • dash salt

Place ingredients in blender.  Blend until smooth.  Let batter rest for about 5 minutes (*helps make a fluffier pancake*).  Heat large nonstick skillet over medium high heat.  Coat with cooking spray, then using 1/4 cup measure, pour batter into skillet making pancakes about 4 inches in diameter.  Cook until golden and flip.

Makes 6 pancakes.  Each serving (3 pancakes) is 4 PointsPlus.

I topped my stack with a “blueberry syrup”.  I placed 1/2 cup fresh blueberries in a microwave safe dish and nuked for about a minute or so until the berries released their juices, then added 1 tsp. agave nectar for a little extra sweet ( 1PP)…

Then we were off to big daughter’s basketball game where we hooted and cheered like crazy people.  She will most likely wear a disguise to school on Monday. 

It was a great game that ended up going into double overtime!  I was exhausted.  Cheering is hard work. ;)

Once home, I needed lunch, pronto!  Quickest thing that popped into my head – sandwich.  This is why I need to make more salad kits!  When I don’t have them handy, I go right for the plain old sammie.  I jazzed it up a little today… Grilled Turkey Pepperoni, Mozzarella and Spinach (7 PP)…

The weather was so spectacular, we decided to go for a family walk.  Well, the husband and I walked;  the daughters rode…

We walked about 3 miles!  I forgot how much I enjoy just walking sometimes.  I even ran a little to catch up with the daughters.  And I forgot how much I like that, too ;)   Maybe I just need some good weather to get me going again!

We all had a  fun time together.  Even Rocky…..

I miss the nice weather so much. It is freezing rain today and the roads and my driveway are literally sheets of ice. Those pancakes might cheer me up though!! Have a great day.

Your pancakes look soooo good! Yum! I have the same problem with pancakes. I eat them, but then they don’t do much for me and I end up getting all shaky because of the lack of protein. Think I’ll try your recipe!

ohhhhhh those pancakes look SOOOOOOOOOO GOOD!!!!! I have been craving pancakes lately so we just had some chocolate chip pancakes this weekend.

Thankfully, since we live in the South winter isn’t that long, so we grill pretty much all year long. As long as it’s not icy or snowy! LOL!

The nice weather sure makes the outside more “fun” for me, too!! Way to go on the walk/run!!

And – I’m drooling over that grill!! Yes, we cookout in the winter sometimes…if we get a nice day! There’s something about grilling that makes food taste amazing!

Love the look of those pancakes, I’ve made some similar before, I think they were from the Eating for Life cookbook. I bought a Cuisinart Griddle for during the winter and have been using that to grill our chicken and pork chops. It works really well. Never seems worth lighting the grill to just do two chicken breasts, but I will once the warmer weather gets here I’m sure.

Wish I could get my kids to eat something like that, they are purists, only syrup on their pancakes, but I say YUM!!!

We typically don’t grill in the winter mostly because we put the grill in the garage before first snow-fall. You know what I’d love to get? One of those grill pans for on top of the stove. Must add to my wish list!

Yes I grill in the winter. We buy skirt steak all the time & hubby likes it grilled so I am outside in the cold grilling away.

LOVE those pancakes!!! When we run in Brig can you make me some?!?!

We grill ALL year round (and by we, I mean Big Man) outside!! The only time we dont grill if there is lightning or too much wind!! And, I have a cheapy grill pan that does magic on the stove top!!

LOVE grilling – bring on Summer!!!!!

I think by the end of this week all our snow will have melted and I CANNOT wait to grill – I miss it so!

I do grill in the winter as long as there isn’t snow and the temperature is not below zero! :D

You pancakes look phenomenal! I let my batter rest inadvertently on Saturday and they WERE fluffier. Ha, who knew?! You, apparently.

Love the walking photos. I can’t wait for spring so I can take the dogs on regular walks! And to grill! We do grill in the winter but not often.

Seriously…my pancakes never come out looking that perfect!!!!
They always taste good though…thanks for the reminder of this recipe too, I had completely forgotten about it and haven’t had pancakes in ages…..isn’t Pancake Tuesday coming up soon?

That blueberry sauce is amazing! So simple and beautiful! We always say we’re going to grill in the winter but we’re wusses. We stay indoors mostly until it’s time to walk the dog. That’s enough outside time for us.
