Hummus Among Us
I can’t thank you all enough for your encouraging comments, texts and emails. I really love this blogging community for the support and friendships. You have all been so amazing!
I woke up feeling positive. I’m not going to let my weight gain or the scale get to me. As I told my friend, Reen when we were emailing one day…what goes up will come down…eventually!
And I decided in July 2007 that I was in it for the long haul, so I will fight til I get it right! HA!
Now, let’s see some food!
I had a doctor’s appointment this morning, so I ate an early breakfast – egg, turkey bacon and a slice of Ezekiel bread (5 PP)…

As you can see, this egg was NOT made in my cute new skillet!
Breakfast held me over until it was time to pick up Gram. Today is her birthday and I offered to take her to lunch. She chose one of her favorite places …
Or Ruby Thursday as she calls it. Actually, said in her strong Italian accent, it sounds more like Ruby Turdsday which is not a great name for a restaurant. Just sayin’
While we looked at the menu, the server brought us mini cheddar biscuits to munch on. I sampled half of one and it was tasty! (est. 2 PP)…
I opted for the Petite Grilled Salmon Salad with lite ranch (est. 10PP)…
I love ordering salads at restaurants. They always taste so good!
Gram and I chatted away, did some mall shopping, then took a rest because Gram’s handbag weighs 540 lbs….
Seriously, she does carry everything AND the kitchen sink in there!
Once back at the homestead, I whipped out the appliances. First up, the food processor for Roasted Pepper Hummus…
- 1 (16-oz.) can garbanzo beans, drained and rinsed
- 1/2 of a fire roasted red pepper, chopped (about 1/2 cup)
- 1/4 cup olive oil
- 2 tbsp. lemon juice
- 1 garlic clove, minced
- 1/2 teaspoon ground cumin
- pinch of cayenne pepper
- s + p
Place beans, garlic, roasted pepper and spices in the food processor. Pulse until finely chopped. With the processor running, add lemon juice and stream in olive oil. Process until mixture becomes smooth and creamy; about 1-2 minutes.
Makes about 1 1/2 cups. Serving size: 2 tbsp. (2 PP)

I am a huge fan of tahini-free hummus. It’s okay with tahini, but I love the taste of hummus without it. There is less of a tang or bite to it; just smooth, sweet beans.
I wanted to dig in right away, but I decided to save it for dinner. Instead, I broke out the blender to make my new daily obsession – Green Monster(1 PP)…
Today’s mix had a little fresh pear in it. YUM!
Dinner was a reheat – Lentil Veggie Burger and roasted broccoli (7 PP)…
Oh, and hummus…
And for dessert… pretzels and hummus (5 PP)…
Lots of hummus among us!

I’ve been making loads of hummus and bean dips lately! I also just discovered tahini and love the texture that it adds to the hummus. Before my hummus was always really dry and hard to swallow. Maybe I’ll make your roasted red pepper hummus next!
Sorry to hear about the weight gain. I think “what goes up must come down” is a great mantra.
Hummus, hummus, hummus…..LOVE IT! Haven’t bought any lately though…or made it. The roasted pepper is my favorite, but also like lemon and black pepper! Served with carrot or celery sticks, or slathered on a bagel thin.
LOVE the picture of Gram. Hi, Gram! And that salmon salad from Ruby’s looks good. Hubby and I might be heading there for dinner tonight or tomorrow for lunch. Have a meeting tonight and just might not feel like cookin.
I tried to make my own hummus without the Tahini and it’s just not for me. I prefer it with Tahini. But otherwise, I love love love hummus! I’m the only one though who eats it at home but I don’t care
Now that you’ve mastered hummus — a Middle Eastern classic — Marisa, I suggest you try baba ganouj, another Middle Eastern favorite. I make hummus all the time! I like tahini paste in mine but it is very pricey here and SOOO hard to find.

I love hummus, and usually make it without tahini just because of the $$ it costs! Roasted red pepper is my first choice – then roasted garlic is a close second – I just can’t kiss my husband for a day after eating the garlic one though
I’ve been thinking about your health and wondering if you’re getting things figured out with your thyroid! Just wanted to know you’re in my thoughts. I had Graves Disease (a hyperthyroid disease) and had to take radioactive iodine to completely kill my thyroid. I now take a thyroid hormone pill every day, so I can kind of understand the scariness of what you’re going through. I really didn’t want to get rid of my thyroid, but I put it off so long that eventually the disease caused my pancreas to shut down and I’m stuck with type 1 diabetes. Boo. I love hummus and so far, my favorite is a kind I haven’t made but Athenos makes it: three pepper. It’s a little spicy and I love that!
I like the lemon hummus from Cedar’s. You know what I want to try is dessert hummus!

I agree that salads taste so much better at restaurants. I can’t ever make them as tasty at home.
I took your cue and whipped a Green Monster in lieu of afternoon grazing which I have a horrible habit of doing. I am really glad that I did. I also just remembered what I forgot at Costco today…the giant can of chick peas so that I can make enough hummus to last a month! Yours looks great. Can’t wait to try it out.

Just found your blog and couldn’t resist leaving a comment on Hummus. I Love it, as it seems most of your readers do. My favorite flavor is one I came up with last week. Butternut Squash Hummus. I subbed roasted butternut squash for the chickpeas, used lemon, garlic, olive oil, tahini, a tiny bit of cumin and a touch of salt. The sweetness of the butternut made it irresistable, tasting much like peanut butter because of the tahini. I had Hummus with raw veggies (Yummy with carrots or raw zucchini rounds) and on toast with roasted red bell pepper slivers and as a sandwich. You gotta try it.
