Sundays In The Kitchen – Fire Roasted Peppers
It’s been a couple of weeks since I’ve done a Sundays In The Kitchen post! Now that spring has sprung, I’ll be spending less time in the actual kitchen and more time at the grill!
I had quite a few peppers in my fridge and decided roasted peppers would be a great thing to make. Instead of firing up the broiler or stovetop, I made them on the grill. It’s easy and won’t smoke up your house!
Here’s the how to:
Wash and dry your beautious bell peppers…
Fire up the grill and wait for it to get roarin’ hot…
Give the peppers a quick spritz of cooking spray…
It helps them shine like the sun…
and not stick to the grill
Place them on the grates…
Close the lid and reduce heat to medium-high which should bring the temperature down to about 400 degrees…
After 10 minutes, give them a check. They should be starting to char up quite nicely…
When they look like this, give them turn…
Close the lid, char, turn, repeat…
You’ll know they are done when the peppers look like they’ve been burned beyond recognition. The more char, the better flavor and easier skin removal.
Remove peppers from the grill and place in a bowl…
Cover with heavy duty plastic wrap…
And let the magic happen. The steam helps for easy release of the charred skins from the peppers. Keep them covered for about 15 minutes or until cool enough to handle.
Then get to work peeling the skins. It’s a messy job, but the skins slide off easily …
The seeds and stem also release without a struggle…
All clean…
And you’re left with the remains…
Discard…
Keepers!
Now you have roasted peppers to use for all kinds of goodness like Harvest Grains Salad , Prosciutto and Arugula Flatbread Pizza, roasted pepper hummus (making that this week!), sandwiches and salads or grilled veggie trays!
Enjoy!
*note: there is a bit of debate as to the proper way to store freshly made roasted peppers. Some feel that storing them covered in olive oil could promote bacteria growth; others say using a vinegar mixture causes too much acidity and affects the flavor of the peppers. Honestly, I just store mine in a covered container in the fridge and try to use them within a few days. I’ve never had an issue, but follow what you are most comfortable with! You can also try freezing them – lay flat on baking sheet, freeze, then place in plastic freezer storage bags. I haven’t tried it, so let me know if that works for you!

The peppers look fantastic! I should have fired up the grill yesterday, was the perfect day for it, but chose instead to make a pot of my Dad’s meatballs and sauce. So good. Took the leftovers, in a container it went into the freezer for one of those crazy middle of the week nights when there is no time to cook. AND it keeps me from being tempted with the leftovers this week!

I am a total pepper fan!! My store just had them on the $1 rack over the weekend – I got yellow, red and green peppers – about 20 of them for $3! I am making stuffed peppers, but I think I’ll grill some up like you.
FYI, when I make my salsa, I leave the char on – it doesn’t taste burnt but gives it a nice smoky flavor. Happy Monday!

I’m a fan of all peppers. I used to grow habaneros and make my own hot sauce. So good! Love em hot. Love em mild.

I freeze mine and they turn out GREAT!
When a grill is not available, a gas stove is another means by which to char peppers. Hold them over the open flame and rotate until nice and black. Quick and easy and yields the same DELICIOUS result. Roasted peppers make every kind of salad better. Yum!

I love roasted peppers, but haven’t roasted any in a long time. I think I have just been too lazy… But they add just that bit of “specialness” to sooo many dishes! Thanks for the reminder!

I used to not eat peppers just because I thought I wouldn’t like them. Then I tasted them and I love them! So lucky you got your grill out – I can’t wait to do that!
I’ll do charred veggies with peppers, white onion, poblano and a few tomatoes and whir that in a blender WITH the char on for a smokey salsa! It’s so good. Add a squeeze of lime, a little salt and fresh cilantro and you are set.

I love peppers all colors! And I love them grilled.
I used to work at a cafe where we roasted our own peppers. We’d roast them in a convection oven until charred and then toss them in a paper bag for a while to let the steam build up. We would then use them for the toppings on certain baguettes and salads. There was a special roast beef sandwich with melted muenster and homemade coleslaw that I used to eat every day….now that I’m preggo I’ve been craving it like crazy! Too bad they closed in 2004.
I even learned how to make a killer miso soup and tomato bisque while I was there. Shoulda written down the recipes!
Oh yum. Fire roasted or smoked anything is just better!
HOLY COW, wow, thanks for posting this with the easy to follow directions and pictures. I love roasted peppers but thought it was hard. Ive been buying the jar stuff and cleaning them.
