Do It
No time to waste this morning. I was starving when I woke up! I got right to it…
A toasted Ezekiel english muffin with Laughing Cow and banana ( 5 PP) YUM! I haven’t had the Ezekiel muffins in a while. I forgot how chewy and hearty they are!
Then, I wasted PLENTY of time getting to my run. I just.didn’t.want.to.at.all. I contemplated skipping it…rearranging it…half doing it. Finally, I just decided to DO IT …

Lunch was much more exciting! I’ve been craving Buffalo Chicken Salad for a few days and finally got to the store for some lettuce …
- mixed lettuce
- diced carrots
- diced celery
- 6 oz. Trader Joe’s Breaded Chicken Tenderloins tossed in 1 tbsp. buffalo sauce
- 2 tbsp. light ranch dressing
This has to be my favorite 8 PP salad …
I needed a snack later. Rushing out the door to teach religion class, I just grabbed a Gala and light string cheese ( 1 PP)…
Dinner was a refreshing and light combo – Sicilian Orange and Olive Salad (2 PP)…
Along with a Spinach and Feta Chicken Sausage and toasted whole wheat pane drizzled with olive oil (9 PP) …
Hoping to make it to my WW meeting tomorrow! I missed going last week due to the daughters being sick, however I did get on my home scale and it looked like I was down a pound! Fingers crossed for a good weigh-in, but regardless what the scale says, I’ve had an excellent week of eating and exercise!

Better than nothing!
Many of you have asked, so I wanted to give a quick thyroid update. Good news is the biopsy was benign! I still haven’t found a new doctor and had more miscommunications with the current idiotic doctor, so at this point, I’m taking a wait and see approach. Most of my bloodwork has come back normal, although a few of the results were on the higher “normal” side and will need to be retested at some time. Right now, I’m kinda sick of being poked and prodded. I need a little break to figure out what the next steps are and whether I want to start on the train of more testing. I’ll keep you posted!

- 1/4 cup Cocoa Goodness Love Grown Granola

I used to eat Larabars all the time as pre-run fuel! I forgot how much I love them …
I wanted a big bowl of comfort for dinner. Pasta, to be exact! I decided to take the plunge and try this interesting pasta that I bought a while back when I was doing the Gluten-Free Experiment …
I won’t lie… I was a little nervous about how this would taste! I ended up being pleasantly surprised! It had a nice firm texture and a taste similar to regular pasta. Not corny at all!
I boiled the pasta according to package directions; meanwhile I cooked up the toppers – Spinach and Feta Chicken Sausage …
Removed from the casing; browned and then tossed with some leftover broccoli. When the pasta was ready, I took a few tablespoons of the cooking water out, added it to the sausage mixture along with 2 tbsp. grated parmesan cheese to make a sauce.
A hearty and comforting 13 PP bowl!
Carb coma achieved

Back In Time
Hi All! Spring break is over, so we are back to the grind. The daughters are not so happy, but I’m glad to get back to a schedule again!
I started off with an early breakfast – egg and cheese on an english muffin (6 PP) …
Cheesy!
Filled and ready for a great workout! Since I got in my run yesterday at the shore, I decided switch up my schedule and hit the gym for a weights workout.

Then, I hopped on the Arc Trainer for another 30 minutes! I usually do a little cardio before weight lifting, however, I read this article that Tonyne posted on Facebook and it made a lot of sense! Bottom line is doing cardio after weight lifting, helps burn more fat. I’m in!
The remainder of the day was mostly spent playing catch-up and working on a photo project for my sister-in-law. I was a bit nostalgic going through old photos. I can’t believe how the daughters have grown so quickly! They were JUST. BABIES. yesterday
I also came across a photo of a girl that I don’t even recognize …
It makes me so sad to see that. Strange thing is, I never remember being that heavy. I remember being overweight, but I don’t think I ever quite realized just how much until I see the pictures. Although I’m still on this journey to get to my healthy weight, I’ve learned so much about how to live a healthy lifestyle that I am certain I will never go back to being that girl!
I took a break from the past and whipped up some lunch. I didn’t get around to restocking the fridge today, so I dug around for a couple freezer finds…
Greek Turkey Burger topped with lite mozzarella on a sandwich thin ( 8 PP)…
Served with broccoli, oil and garlic ( 1 PP) …
Lots of flavor in these burgers …
Dinner was more leftovers!
Brown rice, grilled sausage and broccoli rabe ( 11 PP) …
Off to make my grocery list …
