A Hearty Start
I had the best breakfast this morning! I saw an interesting recipe for a breakfast bake on Kath’s blog that was inspired by Ashley’s Chocolate Buckwheat Bake. It looked so tasty I had to give it a try. I tweaked it a bit to reflect what I had on hand. The result was a hearty cake that was ready in under 2 minutes!
Chocolate Oat Breakfast Cake
- 1 tbsp. ground flax meal + 2.5 tbsp warm water
- 1/2 very ripe banana
- 2 tbsp. unsweetened vanilla Almond Breeze
- 1/4 tsp. vanilla extract
- 1/4 cup toasted oat bran
- 1 tbsp. cocoa powder
- 1/4 tsp. cinnamon
- 1/4 tsp. baking powder
- dash salt
In a small bowl, mix ground flax with water; set aside. Meanwhile, in a medium bowl, mash banana until fairly smooth. Whisk in milk and vanilla. Add in oat bran, cocoa, cinnamon, baking powder and salt. Add flax mixture and stir until all ingredients are fully incorporated. Spray a 6 oz. ramekin with cooking spray. Pour in batter and spread evenly. Cover with paper towel and microwave for 1 minute and 45 seconds. Let cool slightly.

I topped mine with 2 tsp. fruit only strawberry preserves and a dollop of nonfat greek yogurt …
The breakfast cake is just slightly sweet from the banana which is perfect for my taste and leaves room for playing with topping flavors!
This may be my new addiction! So yum!
After my hearty start, I hit the gym for weights…

On the road in my sweaty stink, I stopped for an iced coffee with nonfat milk (2 PP) to get me through my errands …
Blech. Does anyone else think Dunkin Donuts coffee tastes like an ashtray?? Not that I’ve tasted one, mind you.
Breakfast held me over so well that I was able to rip through all my errands without making a pit stop home! When I finally did, lunch was an easy reheat of Grilled Cheese Stuffed Peppers ( 4 PP)…
Along with a Thomas’ pretzel bagel with turkey and a little mayo (5 PP)…
Dinner was a fun treat that the WHOLE family loves. Don’t get that often! With pizza dough and hot dogs being the ingredients, you can’t get too many complaints with that one!
This is my twist on those ever popular crescent dough wrapped hot dogs…
Take store bought pizza dough …
Divide it into eight pieces and roll each piece into a long rope …
Grab your dogs …
Hide the package so your family doesn’t know they are “healthy” hot dogs.
Starting at one end, begin wrapping the dog with the dough…
All wrapped up …
Place on a greased cookie sheet and bake in a 400 degree oven for about 10-15 minutes. There you have it – Pizza Dough Dogs!
I served them with a big salad….
A “no complaining” 10 PP dinner. Music to my ears

I kid you not… I got an iced tea from Dunkin Donuts last Friday and I told my husband that it tasted like an ashtray! I’m glad to know I’m not the only one

Agreed! DD coffee turns my stomach. I go for a grande nonfat latte at Starbucks (iced if it’s hot out). A healthy calcium serving AND caffeine boost for low points.
And breakfast looks awesome!

I meant to tell you – I finally found the pretzel bagels! They are SO good! I’ve been eating one of those with 1 point of 75% reduced fat Cabot white cheddar. Heavenly. And now I must try your breakfast cakes! YUM!

I have been wanting to try one of Ashley’s breakfast bakes – they look simple to make.
My mom used to make something similar with hot dogs – except she wrapped them in crescent rolls and put bacon and cheese in them. Talk about a heart attack wrapped up in a crescent roll.
They were amazing.

I really need to find those pretzel bagels! They look so awesome!
Mine would probably anything I marinate for the bbq. My roasted almonds,baked beans and sweetand sour turkey meat balls are close. But I am sure I am nothing compared to you. Your food always looks wonderful!!

I saw that breakfast on Kath blog too and thought it look good. Thank for testing it. I may have to try that one. I love the idea for the hot dogs. I just bought some vegan hot dogs and was going to make beans and dogs but that looks quite good too.
Mmm, your food looks delicious. That breakfast recipe looks great. I do read Kath’s blog, but must have missed that one. A banana really can provide a lot of sweetness. I don’t have toasted oat bran or ground flax seed, unfortunately, but it does look good.

Laura, I believe you can make them with other flours (like steel cut oats ground into a flour) and use an egg instead of the flax seed. It’s a fun recipe to play with!
Without a doubt my rice and beans is the most requested dish I make. My husband could eat it every day.
I have to admit I used to think that DDs coffee was great but I cannot stomach it anymore. I’m not sure what happened.

Hi Marissa! This breakfast cake looks great. I tried making it but had to microwave mine for way longer….and it was till a bit gooey….should it be a bit gooey underneath/in the middle? Yours looks pretty cakey.

Hi Tyla!!! Mine was definitely cakey and not gooey. Hmmm…not sure why that happened for you?! Especially if you were using dry oat bran…it tends to suck up any moisture like crazy! If you try it again, let me know how it works out for you! We’ll troubleshoot and figure it out!!
