Mother’s Day Treats
Hey everyone! Hope you all enjoyed your weekend and Mother’s Day!
I had a wonderful day that started with a breakfast treat. Normally, the husband and daughters make me breakfast in bed on Mother’s Day, but today they decided to take me out! So, after I got up and rolling, we headed to Ruby’s Diner…
I was glad I had the opportunity to check out the nutritional info beforehand. Wowza, there were some pretty calorie dense dishes on the menu, even those from the “De-lite-ful” section. Some were up to 1100 calories! And that’s “lite” ?! I wanted to enjoy this day, but really didn’t want to overindulge, so I went with the best option – egg white omelet with cheese, tomatoes, spinach and mushrooms along with a side of fruit …
I didn’t eat the toast and this breakfast still came in at 10 PP! It was very tasty, though and I was happy with my choice.
I sipped on some coffee while I read my cards from the daughters and husband …

They love me to life and to death. Well, I guess that’s a good thing?! LOL! Then, in true David Letterman style, they wrote a Top Ten List. So funny! The husband is already requesting that he get one for Father’s Day!

From lunchtime on, our day was spent at a family First Holy Communion party. It was a nice event at a restaurant with a buffet meal of pasta in rosa sauce, stuffed flounder, roasted pork sandwiches, chicken, green beans and mashed potatoes. I went with the chicken, salad and green beans (est. 8 PP) …
I had a couple bites of cake (2 PP) and ended with some hot tea and lots of gabbing
When we got home and dinner rolled around, I started getting hungry. I wasn’t in the mood for a regular dinner; instead I made a treat!
Yesterday, I was itching to make carrot cake. Ever since seeing Nicole’s recipe, I have been dying to make it. I planned on making it for Easter, but never got around to it. It’s been haunting me since!
I was going to finally cave and make it, however, I was worried about having this cake in the house with no one to share it with( the husband and daughters aren’t fans) ! I puffy heart carrot cake and I was sure that I would be tempted to eat more than my fair share. I asked my Facebook friends for help in talking me out of it and they came up with some great ideas. (* I’m still going to make your cake, Nicole! It’s on the menu for Memorial Day!)
While all that inner turmoil was going on, I had an idea! I’ve been enjoying the Banana Oat Breakfast Cake and Chocolate Oat Breakfast Cake lately, so why not try a Carrot Cake version? I got right to it!
Carrot Cake Breakfast Bake
- 1 tbsp. ground flax meal + 2.5 tbsp. warm water
- 1/4 cup oat bran
- 1/4 cup grated carrot (1 small whole carrot)
- 1/2 tsp. ground cinnamon
- 1/4 tsp. baking powder
- 1/4 tsp. vanilla extract
- 2 tbsp. raisins
- 2 tbsp. canned crushed pineapple
- 1/4 cup unsweetened applesauce
- 2 tbsp. unsweetened vanilla Almond Breeze (or skim milk)
Cream Cheese Glaze
- 1 tbsp. reduced fat cream cheese, softened
- 1 tbsp. powdered sugar
- 1/2 – 1 tsp. nonfat milk (depending on desired consistency)
In a small bowl, mix flax and water. Set aside for 2-3 minutes. In a medium bowl, combine remaining ingredients. Add prepared flax mixture to oat bran mixture; stir to combine. Coat a 6 oz. ramekin with cooking spray. Pour mixture into ramekin; microwave for about 2 minutes. Allow to cool for 3-4 minutes, then spread with Cream Cheese Glaze (optional, but highly suggested
).
Makes one serving. 8 PointsPlus per serving with glaze. 6 PointsPlus per serving without glaze.
It was amazing and filling!!! It totally satisfied my carrot cake craving without overindulging!
So, tonight I thought it would be an awesome way to end this lovely Mother’s Day…
I could get used to this kinda dinner

I love, love, breakfast for dinner or any time of day. If I can get an omelet, I will!
One thing I find amazing about restaurants is how they can take a meal that you make at home (ie egg white omelet with a side of fruit) and are some how able to jack up the calories. You wouldn’t think it when you go out to eat, so you think everything is like it would be at home. Not so.
I love brinner! Usually it’s a casserole that has eggs in it – and ham! So technically it could be dinner but to me eggs make things brinner!

Haha! Happy belated Mother’s Day! I sooo get it! I brought it to work because it was too dangerous to have around! It’s smart to not set yourself up for a bad situation! Carrot cake can do that to a woman…even a woman with the best of intentions

My daughter and I LOVE brinner, however the hubs isn’t a fan. When Hannah was little and my husband traveled for work, it would be our special treat to have pancakes for dinner.
