Sweet And Spice

Thanks for your wonderfully supportive comments on my last post guys!  I was happy to snap out of that bummer shopping trip quickly and not let it get the best of me! 

Today started way earlier than normal.  Big daughter needed to be at school by 5:50 a.m. to leave for a field trip!  I am not a fan of the 5 o’clock hour, so coffee was brewed up STAT (1 PP) …

A while later, my stomach woke up and was ready for breakfast.  I whipped up another Oat Cake in an instant .  This one was like a hearty banana bread!  The whole banana added so much sweetness without the addition of sugars.  My new favorite!

Banana Oat Breakfast Cake

  • 1 tbsp. ground flax meal + 2.5 tbsp. water
  • 1 medium very ripe banana, mashed
  • 2 tbsp. unsweetened vanilla Almond Breeze (or milk)
  • 1/4 cup oat bran
  • 1/4 tsp. baking powder
  • 1/4 tsp. cinnamon
  • 1/4 tsp.  maple extract (or vanilla)
  • dash salt

Mix flax with water and set aside for 3 minutes.  Combine remaining ingredients.  Add flax mixture;  stir until fully combined.  Coat a 6 oz. ramekin with cooking spray.  Pour batter into ramekin and spread evenly.  Microwave for 1 min. 45 sec.  Let cool slightly.  Enjoy!

Makes 1 serving for  6 PointsPlus .

I was all filled up and ready to meet my Dad for a run.  We had hills and wind to deal with, but it was a beautiful 3.2 mile run using 2:1 intervals (run/walk) …

Lunch was a simple turkey blt wrap – 2 oz. turkey, turkey bacon, spinach, tomatoes and light ranch rolled up in a Joseph’s Lavash Bread ( 6 PP) …

and a big fruit salad on the side …

More fruit for afternoon snack!  A gala + light string cheese (1 PP)…

Dinner was an idea I threw around in my head that I wasn’t quite sure would work, but it did!  In honor of Cinco de Mayo, I made a Mexican Meatloaf

Mexican Meatloaf

  • 1 lb. 96% lean ground beef  
  • 1/2 cup fat-free refried Beans ( I used Old El Paso brand)
  • 2 egg whites
  • 1/4 cup yellow cornmeal  
  • 2 tsp. taco seasoning 
  • 1 cup salsa 
  • 1/2 cup low-fat shredded cheddar cheese   

Combine beef, beans, eggs, cornmeal and taco seasoning until fully mixed.  Coat a 9-inch loaf pan with cooking spray.  Press beef mixture into pan.  Spread with salsa and top with cheese.  Bake in a preheated 375 degree oven for 30-35 minutes.

Makes 4 servings.  Each serving is 6 PointsPlus.

My favorite Mexican meal? Well….I haven’t actually tried it yet, but I’m sure it’s going to be Marisa’s Mexican Meatloaf! :)

The oat cake looks tasty! I’ve been seeing that or similar popping up on a lot of the blogs I read. I really want to try it. However, I only have non-ground flaxseed, and am having trouble finding the ground stuff. Where do you get it?

Laura, I’ve been able to find it in most grocery stores; usually in the natural foods section or the baking aisle. Bob’s Red Mill and Hodgson Mills are popular brands that I’ve seen out there. You can always substitute an egg or 2 egg whites if you want to make it without the flax, too. :)

Your oat bake looks delicious. I’m such a sucker for fries, if they are in my freezer then somehow a couple always ends up on my plate no matter what I’m eating and if it goes with it or not :)

Looks great as always! The New York Times had some good homemade cracker recipes this week — maybe next time you get those hungries you should make your own!!! There’s also an interesting article on adding pureed vegetables to recipes and how that helps you eat less. A fascinating recipe for mac and cheese with pureed cauliflower and summer squash. i may just have to try that one! Great run, i am in awe.
