I hit the treadmill first thing for a run this morning. Boy, am I turning into the biggest wimp ever. It was 78 degrees and humid, so I opted for the treadmill instead of running outside! I better buck up…summer isn’t even official yet!
Anyway, I’m happy and thankful for my treadmill and promise to never call it the “dreadmill” again
I finished up 2.5 miles doing 3:1 intervals with the GYMBOSS (forgot my picture today!).
Next up was breakfast. I couldn’t decide whether I wanted sweet or savory, so I went with both! Two slices of Ezekiel Raisin Bread (love) with egg and 2% cheese (7 PP)…
The sweet and savory was such a good combo!
Lots of household chores were on the agenda today. Snore.
Lunch perked me up, though! I’ve been craving tuna for a week and I finally made some after seeing TJ’s tuna lunch!

Sweet and savory strikes again!
The afternoon was a bit of a struggle. I started picking through the pantry after a stressful situation, but I was able to reign it in with the help of my positive affirmation for the day. It did aid in getting me to recognize what I was doing and snap me out of it, so that’s a good thing!
I was in the mood for something light and veggie for dinner. I had two zucchini waiting to be used and came up with a fun way to eat them!
Cheesy Stuffed Zucchini
- 2 medium zucchini
- 1 egg
- 1/2 cup shredded lite mozzarella
- 1 tbsp. Italian seasoned dry bread crumbs
- 1 tbsp. sundried tomatoes (packed in oil), chopped
- 8 slices turkey pepperoni, diced
- 1 tbsp. chopped fresh parsley
Cut zucchini in half lengthwise. Hollow out zucchini with a spoon or sharp knife, leaving a border along sides and bottom. Season with salt and pepper; set aside.
In a medium bowl, combine remaining ingredients. Divide filling evenly among zucchini shells. Place in shallow baking dish and bake in 350 degree oven for 15-18 minutes.
Makes 2 servings (2 halves each) at 5 PointsPlus.

Really… what’s not to like …
This would be a great filling for other veggies like eggplant or portabella mushrooms, too. Can’t wait to try those!

My least favorite household chore would be cleaning the oven !!! I think if I could find a way to do it and not wind up with half of me covered in oven grease and chemicals I would like it more. Don’t feel bad about using the treadmill- running outside in the summer may look like a heroic thing but it can be dangerous. It does not matter how we do the job as long as we get the job done !

melon baller!! I have found another use for my melon baller – it is PERFECT for hollowing out zukes!!

Least favorite chore: putting away stuff (I don’t mind cleaning, shopping, loading the dishwasher, etc., I just hate putting everything away when I am done!)

Least Favorite Chore: Cleaning the bathroom. Luckily I married a wonderful man who does it.

I have to admit, I may have rolled my eyes at the whole postitive affirmation thing but I’m kinda getting into it!
Ohhh, I so need to make some of that zucchini! My hubby has never liked zukes but I bet he’d eat them like this. I’m a fan of sweet and savory as well–your eats look yum! Good job on the positive affirmations. I said a prayer for you today, and hope the stressful situation has already resolved.

I so wish I had a treadmill for the rainy days! I use to walk outside no matter what the weather was but I am no longer motivated to walk in the rain.
Least favorite household chore is cleaning the wood blinds, slat by slat! They get dusted each week but a couple times a year I feel the need to wash them! Did I mention that we have about 35 windows with wood blinds? It’s no small task.
Hope the stressor is better!!! My least favorite household chore? Emptying the dishwasher. Weird, I have no problem LOADING it, but HATE putting dishes away. Have a great day Marissa!
the stuffed zucchini sounds/looks sooo good. i’m def going to make these when i harvest some zucchini from my garden since we always have turkey pepperoni on hand! thanks for sharing
my least favorite household chore is: cleaning the toilets {which is probably why its been on my to-do list since monday} and putting away the dishes {i dont mind washing them, but putting them away is the pits}.

Stuffed Zucchini – YUM! I have the ingredients for the grilled stuffed peppers in my fridge that I still have to make – I may make these at the same time!
I am a total wimp when it comes to running outside in the heat. Today I ran 3 miles on the treadmill because the temperature was 90 degrees outside. The only problem was that the cheap-os at my gym probably had the temperature set at 75, so it wasn’t much better. Ugh! I’d take running in the cold over heat anyday!

I don’t like cleaning the kitchen. I’m pretty much the only one doing it, and it gets OLD!!!!

I didn’t have a vegetable plan for dinner when I read this yesterday, and realized I had a bunch of summer squash AND the main course baked at 350 as well. When I checked the fridge, I also found leftover stuffing from the previous night’s turnovers (ground turkey, spinach, and sweet potato sauteed in garlic), so I just stuffed the squash with that.
So…I might not have used anything from the recipe, but I still appreciate it!
