It’s Officially Summer
Today was the daughters’ first official day of summer vacation! No early wake-up calls, rushing to school or running to afterschool activities. We got to sleep in a little and spend the WHOLE day together…
Okay, it really wasn’t that bad
We actually had a nice day of shopping for summer essentials! Before heading to the mall, I fixed a quick breakfast – egg whites and 2% cheese sandwiched between 2 slices of toasted Ezekiel bread (6 PP) …
Then, we hit up the stores where the daughters scored some great deals on a few cute tanks, skirts and shorts. They were so excited!
I hadn’t planned on staying at the mall for lunch, but it got late and the crew was hungry! Chick-fil-A won by unanimous vote. I went with my standard choice – Chargrilled Chicken Salad with light Italian (6 PP) …
We made a quick pit stop at home and moved on to the local produce store for much needed fruit and veg…
Today’s haul included…
- 4 lbs. bananas
- 2 lbs. strawberries
- 1 pint blueberries
- 12 gala apples
- 1 lb. red seedless grapes
- 1 mango
- package of romaine hearts
- pint of grape tomatoes
- container of baby spinach
- bag of red peppers
- package of 3 portabella mushrooms
All that was only $24.00!
I grabbed a gala and paired it with a light string cheese for afternoon snack (1 PP)…
Dinner was another salad making use of leftovers from our Father’s Day feast. Chicken, Tomato and White Bean Salad served on baby spinach with shaved asiago cheese ( 9 PP)…
Here’s the recipe for Tomato and White Bean Salad …
- 1 pint grape tomatoes
- 1 can (14 oz.) cannellini beans, drained and rinsed
- 1/4 cup thinly sliced red onion
- handful fresh basil, shredded
- 1 small clove garlic, minced
- s + p to taste
- 3 tsp. extra virgin olive oil
- 2 tsp. red wine vinegar
Mix ingredients. Serve at room temperature or chilled.
Makes 6 side dish servings (heaping 1/2 cup) at 2 PointsPlus per serving.
This salad would be great with tuna or shrimp added for a complete meal!
I wanted something sweet after dinner, but I’m sticking with my sugar- free resolution. Fruit wasn’t sounding exciting, so I opted for a Peanut Butter Cookie Larabar instead (6 PP) …
Staying away from refined sugars is hard, but it seems to be working to help diminish my cravings. And it’s helping in the weight department, too! This week I lost 3 lbs.!
Since I didn’t get my weights workout in this morning, I’m headed to the basement to pump some feathers iron!

What do you spend the most on with your weekly food budget? I definitely spend the most of fruits and veggies. I try to buy meats when they’re on sale, but I always spend for fruits/veggies no matter what price they are! It definitely helps to have a local discount produce store, though!

The End Is Near
Hey, everyone! We are in the final days of school and there is a crazy flurry of activity going on, so I’m gonna make this quick!
Since this was my last full day before the daughters are finished school, I got my enormous “to-do” list in hand and headed to every store in the tri-state area to wrap it up.
How do you think I made out with that?
Yep, that’s about right. The intention was there at least
Before heading out for my successful errand extravaganza, I whipped up a big yogurt bowl for breakfast (4 PP) …
- 1 cup homemade greek yogurt
- 4 strawberries
- 1/2 cup blueberries
- 1/2 banana
LOVING the homemade yogurt! Definitely making more this weekend!
In between travels, I made a pit-stop at home for lunch. Just a simple sandwich with leftover grilled chicken, cooper sharp cheese, dijon mustard, baby spinach and vidalia onion on Ezekiel bread (10 PP) …
Along with a sweet Gala…
On the last day of school (which is tomorrow!), I always take the daughters out for lunch to celebrate a year of hard work! However, they are “too busy” with parties and friends to go.
And so the “Mom Who???” begins.
Not one to buck tradition, I took them out to dinner instead! The husband had a business dinner, so he couldn’t come, but we called him while at the table and chatted for a few minutes! Yes, I know… bad manners!
After much debate on where to eat, we settled on Champps Restaurant …
I had planned on getting an entree salad, but it was Fajita Night! I opted for the Shrimp Fajita special. It came sizzling to the table…
Pretty tasty! I ate half the rice, half of a small tortilla and picked through everything else. Not sure of Points on this; I’m estimating it at 18 PP, so that should cover it!
I was dog tired and it was late when we got home, but guess what? I slapped on my workout clothes and did a quick 25 minute session of Advanced Bootcamp on Exercise TV! No skipping a workout allowed
And now…I collapse.

Hi Everyone!!! Anyone feeling sad they’re not at Fitbloggin?
I couldn’t go this year, but I sure had a blast last year! It was the first blogging conference I had ever been to and it was so fun to meet/see bloggers that I had been following for years! You can check out my recaps from last year to revisit my conference awkwardness:

So, even though we’re not schmoozin’ at Fitbloggin, we can still have some good eating fun, right? Right!
The day started off with a dreary-on-the-treadmill 2.5 mile run using 2:1 intervals. I seem to be stuck on this interval set, but I like it for now…
Breakfast was an egg sammie. I was out of my beloved Ezekiel english muffins, so I used the Ezekiel bread instead…
Egg, Ezekiel bread and 2% cheddar for 7 PP.
For lunch, I also seem to be stuck on Grilled Chicken with Caprese Salad (8 PP)…
It’s that good! I’m going to try it with shrimp next. YUM!
Afternoon nosh – a fancy fruit bowl of banana, plum, pear and orange …
Dinner was a big roasted chicken dinner – chick chick with gravy…
Served with roasted baby potatoes, sauteed mushrooms and salad (12 PP) …
I have another crazy weekend on tap with dance recitals and bridal showers! Hope you all have a wonderful weekend and I’ll see you on Monday!

Are you nervous when going to an event where you don’t know anyone? Are you a wallflower or a mingler? When I went to Fitbloggin last year, I didn’t know a SOUL, other than the people’s blogs that I had read for years! I knew them, but they didn’t know me! LOL! I was so nervous and bumbled my way through most of it, but I tried to mingle as best I could. I’m really more of an awkward wallflower in those situations!
