Beat The Heat
It seems like just yesterday we were all complaining about the cold, now it’s the heat! Temps soared to 100 degrees today and are going to 102 tomorrow! We have a wedding to go to in the evening; hope it cools down for the bride and groom!
I took no chances with an outdoor run today … down the basement to the treadmill! I went with a short 2.4 miler, sticking with 3:1 intervals on the GYMBOSS …
Breakfast was a savory/sweet combo – Ezekiel cinnamon raisin bread with egg and Laughing Cow cheese (7 PP) …
Yummers!
As much as I wanted to hole myself up in the blasting air-conditioning, I had a few errands to get out of the way. I decided to eat lunch first, so I wouldn’t be tempted to stay home if I made a pit-stop!
I fixed up hot dogs and fries, the easy way! A nuked Applegate Farms Organic Beef Hot Dog topped with jalapeno mustard in an Ezekiel bun (6 PP)…
And a new Trader Joe’s find… Skinny Fries!
These are similar to POPchips , but in stick form. I like that you get a ton of them for only 3 PP …
Not much in nutrient department, but good for those days when you just need to nosh! Which isn’t today, thankfully ![]()
I found that I was satisfied with a half serving (2 PP) …
No, I don’t have heat stroke. ![]()
Altogether with a handful of cherries …
Then, out into the burning inferno! I slogged through the errands, making it home in time for dinner. The thought of turning on the stove just seemed WRONG, so it was another “nuke and eat”!
Out of the freezer came Lentil Veggie Burgers that I topped with 1 oz. creamy goat cheese (7 PP) …
And hit up the garden for a side dish of cucumber and tomato salad with sliced lite string cheese, basil, and tossed with extra virgin olive oil and vinegar (3 PP) …
I may never use the stove again ![]()

No Skipping Allowed
Thank you all so much for being open and willing to participate in my Positive Affirmations Week! I loved reading your affirmations and it really gave me strength during the day to know that we were working on being positive together!
I actually repeated my affirmation quite a few times during the day, especially when I was feeling snacky in the afternoon. It helped me dodge the cookies that were beckoning to me
So, the morning started out with a trip to the dentist instead of my usual workout. I got out mildly unscathed (1 cavity
) and with some nice parting gifts …
Breakfast was a big bowl of cornflakes and berries (5 PP) …
Which held me over for exactly 2 minutes before I was starving again! Cereal and milk just don’t cut it for me. Luckily, lunch was right around the corner. Finishing up the last of the leftover picnic feast – Black Bean Chili Dip with Guiltless Gourmet Mucho Nacho Tortilla Chips for dipping (11 PP) …
Cheesy and dippy…
Afternoon snack was fresh pineapple …
Not cookies. Or cake balls. Or brownies.
The family were having hot dogs for dinner, so I followed suit with a turkey and cheddar sausage on an Ezekiel hot dog bun topped with relish and onion (7 PP)…
And a side of Light Slaw with Cranberries and Honey (1PP)…
With watermelon for dessert!
I’m off to the basement for a weight lifting session. No workout-skipping allowed!

New Frame Of Mind

I was such a moody old crankpot this morning. My back gave me trouble during the night, so I didn’t sleep very well. I sure wasn’t motivated to run, but a girl’s gotta do what a girl signs up to do.
Pre-run fuel…
I met up with my running partner at the hilly trail again. It’s not so intimidating anymore and it’s probably better to help us build more stamina. I set the GYMBOSS back to 3:1 intervals instead of 2:1 and it worked out fine. We finished up 3.56 miles in 44 minutes of happiness
After-run fuel – Thomas’ light english muffin, egg whites and 2% cheese…
I ran errands the remainder of the morning, then got into lunch – Applegate Farms Uncured Organic Beef Hot Dog on an Ezekiel hot dog bun with a gala and some fun new chips…
They are a nice mix of crunch with a slight bit of spice from red pepper and cumin. Big daughter LOVED them and ate a bunch as her afterschool snack!
Glad I got to try a serving for lunch!
So, speaking of afternoon snack. Here was mine…
Times eight million. I’ve really been struggling these past few days. I overate a lot this weekend and I can’t seem to get my head back in the right frame of mind. I’m frustrated and feeling a bit out of control. I think I want to be in control, but I know that it takes work to do that and I’m being lazy about it. Not because I don’t care, but because I’m caring too much. It’s starting to make me crazy and nervous and feeling dieting feelings again. So frustrating because last week, after all the veggie buying and making, I was ON IT. I felt strong and healthy. I was eating well and not obsessing. After these past few days, last week seems like eons ago in a foreign land. Big huffy sigh.
On to veggies… With the last eggplant from the veggie buying extravaganza, I made Skillet Eggplant and Tomatoes…
Place diced eggplant in hot nonstick skillet with 1 garlic clove and 1 tsp. olive oil…
Cook until slightly softened, then add a can of drained diced tomatoes…
Add salt, pepper and any seasoning of choice – I used dried thyme – and allow to cook for another 5-10 minutes.
I used it as a topping for sauteed polenta cubes and called it dinner…
With a sprinkle of cheese… of course!
Okay, I’m off to get a new frame of mind
