Cooking Mama
I went a little crazy at the produce store today…
Hence, the title of this post! More on that later. First let’s talk breakfast…
I seem to be unable to function without this…
I haven’t been sleeping well for over a week due to the back pain, so it’s totally necessary. Plus, I love it
I also LOVE roasted veggies! I have been craving them like crazy, even for breakfast. They were already in the fridge for the taking, so I whipped up a roasted veggie egg white omelet …
So good, especially with a melty lite string cheese in there!
A while later, I turned to Exercise TV for another YogaWorks Bodyslim session. Yoga has really been helping my back and my hip. I especially like this workout video. It’s 50 minutes long, is challenging and I like the flow of it. It’s a major workout, too. I’m surprised at how much huffing and puffing I do at certain points.
Lunch was earlier than usual due to an eye doctor appointment. I wanted something quick and easy. Oh, and salty.
Applegate Farms Organic Uncured Beef Hot Dog on an Ezekiel hot dog bun with baked bbq chips and persian cukes coming right up…
True confession: I brought it in the car because I was running late for my appointment. Yes, plate and all…
On the way home from the eye docs, I got a craving for roasted veggies again! Weird, right? Visions of produce danced in my head.
Clearly, I need my head examined.
I stopped off at the produce store near my house. I haven’t been in quite a while because I’ve been trying my best to buy as much organic food as possible. Due to ease, I made an exception today.
I went a little nutty with all the options. Seriously, I restrained myself so as not to buy more. Here it is again…
- yukon gold potatoes
- baby portabella mushrooms
- fingerling potatoes
- zucchini
- eggplant
- scallions
- broccoli
- persian cucumbers
- parsnips
- roma tomatoes
- red onion
- butternut squash
- cilantro
- avocado
And some fruit!
- bartlett pears
- peaches
- honeydew
- gala apples
- honey roasted almonds
Whew.
Now what?
I wash and clean and peel and slice and dice and chop and chop and chop and chop and cook and roast…
Two hours later, I stop for some dinner. Which was not roasted veggies because sadly, I didn’t love them so much anymore.
Okay, I did dig into the roasted fingerling potatoes along with Barbequed Seitan Ribz that I made over the weekend…
And now for the worst part of buying- too- much- stuff –so- you- have- to- chop-to- infinity- and- cook- or- else- it –will- spoil- before- you- get- to –eat- it- all-which-is-a-big-sin-since- children-are-starving-in-Africa…
Clean- up.
Did I say that I need my head examined? Sigh. :/
Have a great day, everyone!
Which do you like better – grilled or roasted veggies? I say roasted!

Did I Do That?
Who doesn’t love starting the day with a Breakfast Sundae?
![]()
Not me.
Banana soft serve mixed with 1/4 cup nonfat greek yogurt and 2 tsp. unsweetened cocoa, topped with 1 tbsp. oats, a drizzle of almond butter and a fresh cherry…
Happy, happy, joy, joy.
Today was a pajama-wearing-until-afternoon-to-squeeze-out-every-bit-of-summer-laziness-before-school-starts kinda day
The daughters had a friend over and I spent much of the day spraying them with the hose and setting up a makeshift waterslide in the yard. They had a blast. I was sweaty, sticky and hot. My fault for wearing head to toe black pajamas in 97 degree weather. Outside. In the front yard for all to see.
Who does that?!
Yes, me.
I broke out of my sweaty Ninja outfit and made some lunch. I had a hankerin’ for a hot dog…
A salty, lean Applegate Farms Organic Beef Hot Dog on an Ezekiel hot dog bun with a side of steamed broccoli. Simple, but good.
And who says hankerin’?!
*raises hand* <—– needs to get out more.
More water fun took up the afternoon, so there was no time for a snack. Good thing we had an early dinner planned! My Mom invited us out for dinner at Olive Garden…
This restaurant is a minefield of disasterous eating waiting to happen. Mozzarella fondue, fried lasagna and Never-Ending Pasta Bowls. Kill me now.
But, I resist. And order…
and indulge …
just a little…
And came home to sweat it up again with the daughters doing Cardioke and Give Me 10 Core on Exercise TV. In head to toe black pajamas. Again.
Who wears pajamas to work out?!
Me
Have a great day, everyone!
What have you been hankerin’ for craving lately?

Taking Action
No time for a leisurely breakfast today! I had an early morning wake- up call to run! My running partner, Kerry, met me at the paved trail where we knocked out 3.56 miles doing 3:1 intervals a la GYMBOSS…
It was pretty humid out there and my energy took a dip around the 2.5 mile mark. It was a weird feeling; one minute I was okay and the next I just felt this drain of energy and kind of weak. But, I recovered with the next interval, so I’m not sure what was up with that!
The best recovery of all…
Clean Eating Brownie Waffle topped with plain nonfat Chobani and strawberries! There is a waffle under there…
Most of the day was spent getting ready for vacation! Part of the “getting ready” process was using up the leftovers. Grilled Eggplant and Bread Salad with a sprinkle of parmesan for lunch…
Although, I would not recommend making this salad in advance since it tastes best room temperature, I was surprised at how good it was cold and how well the Ezekiel hot dog bun bread cubes held up. I expected them to be completely soggy, but the weren’t!
Unpictured snacks were the last of the Triscuits and a lite string cheese. I almost chowed down a 1/4 bag of SunChips to “just get rid of them”, but I stopped myself after a few chips. I knew I really didn’t want them, so I put them away.
The interesting thing that I noticed – the act of putting them back was slow and controlled. Almost as if I was giving myself time to change my mind and dig in the bag. But, once they were out of my hand, I felt relief. Major overeating crisis averted. It showed me that these instances of bingeing do take a concentrated effort , both mentally and physically. I can’t explain how inane the internal dialogue was that was going on in my head during it. It was an “angel/devil” type of conversation pinging back and forth – “eat it, don’t…you want it, you don’t.” But, I couldn’t FULLY talk myself out of it until I made the actual physical motion of putting the bag back. I know this sounds ridiculous over some stupid SunChips, but it really brought to light that getting over these episodes requires as much of an ACTION as it does a mind shift. They have to go together; happen together. One without the other still leaves you wanting, desiring and having compulsive feelings. But, the action and the mind shift being cohesive and working together makes it go away. Hope that makes sense ?!
Anyhoo… dinner. Digging up the last of what’s in the fridge for a kitchen sink salad…
- romaine lettuce
- diced roasted chicken breast
- red onion
- cukes from the garden
- carrots
- dried cherries
- olive oil and good balsamic vinegar
Crunch, crunch, crunch.
Yep, it’s crunch time! Gotta get packin’! See ya at the beach! Whooo hooo!
Have a great day, everyone!
What are your favorite beach eats? (so I can glean your ideas
