Let The Sun Shine
Happy Friday!!! The weather has been gorgeous ‘round here which always seems to give me more spring in my step.
Well, that and some coffee…
Pardon my messy desk.
I had a run scheduled for today so I whipped up my fuel…
In the blender went 1 cup skim milk, 1/2 banana and 1/2 cup frozen mango. It could’ve used some Malibu Rum, but other than that, it was a keeper.
Then, off I went. I mapped out a new route in a different neighborhood. It was a nice change of pace, mainly flat (which I love) and had a one mile loop.
Mile one = totally suckish. Mile two = semi-suckish and non-groovish. Mile three = better, but not by much.
Great run, huh?
I don’t know what was up. Just one of those days where I wonder why I run. It’s a funk. I hope for it to leave soon
When I got home from my fantastical run, I was hungry! I reached in the fridge for a Fruit Crisp (recipe to come) that I made the other day and didn’t get around to eating….
It held me over just long enough to meet up with Mom and Gram for lunch at …
Did you guess? Yep, Gram’s favorite place – Chick-fil-a! I get the same thing every time I go – the Chargrilled Chicken Garden Salad. I’m so boring.
And starving three hours later! I dug into some Mary’s Gone Crackers and Applegate Farms Herbed Turkey Breast…
There was no trickery for dinner tonight. I gave them a reprieve with a nice bowl of pasta and salad. I decided to plow through some of the leftovers in the fridge and the stash in the freezer.
From the deep freeze came these…
and from the fridge came the last of the Giant White Beans and Raita Creamed Spinach…
I love easy dinners
I love dessert more… homemade watermelon ice…
This could not have been more simple. I froze cubes of watermelon, put them in the food processor (you can use a blender) and pulsed until chopped. So good on a sunny day

A Bottomless Pit
Happy Monday! Did you all have a nice weekend? Things were relax to the max ‘round here so not much doin’.
I did get out bright and early for a run Sunday morning. Things went okay. I wasn’t feeling this run and basically wussed out at 2.9 miles instead of the 5 that I intended on. But, I made a promise to myself that I wouldn’t wuss out on Tuesday’s run no matter what! I don’t like that feeling of disappointment when I know I could have done better but, didn’t push myself.
In the interest of time (and the fact that if I didn’t leave the house immediately, I wasn’t going anywhere!), I just grabbed a handful of almonds to fuel me for the run…
When I got home, I was starvin’ marvin’. I whipped up some scrambled eggs topped with lite cheese, salsa and guacamole…
Yumm!
That lasted about a minute in my stomach. I was hungry every 2 hours! Really stomach-growling hungry. I hate those days!
I put off lunch as long as possible. Then, I had at it. The quickest thing that caught my eye was this new find I picked up at Trader Joe’s…
I went bun-less because I wanted a big heap of Lauren’s Creamy Potato Salad…
Lauren posted this and I haven’t stopped thinking about it! I made it on Saturday and it was even better the next day! I love that it’s made without mayo – just a mix of hummus and greek yogurt. What’s not to love?
I topped the burger (which was meh) with raita …
and had an apple for “dessert”…
It all went down toooo fast
Later, I had to take little daughter to her dance rehearsal and I knew that it would go late into the evening, so I threw together a “whatever’s in the fridge” dinner for myself before we headed out.
In the dish…
- 1 cup cooked brown rice
- 1/2 cup Trader Joe’s Giant White Beans
- 1/3 cup leftover cooked ground beef
- 5 button mushrooms
- 1 tomato
It was delicious! And much better than grabbing the candy bars or soft pretzels at the rehearsal!
And when we finally made it home, my stomach was growling
It’s a bottomless pit!
I fed it a blueberry banana smoothie…
and told it to knock it off already

Drink Up
I need to drink more. Alcohol? Possibly.
Water…
Definitely.
I’ve been having a little too much of this…
And before I know it, half the day is gone and I’ve hardly had more than a glass of water!
It’s so unlike me. I’ve always been a HUGE water drinker. I’ve never had a problem getting in my required 8 glasses a day and then some. But lately, I’ve been forgetting??? So, I made sure to get out my big pitcher to keep an eye on how much I’m drinking.
After coffee and a little water, I made up my pre-run smoothie. In the mix…
- 1/2 cup skim milk
- 1/2 cup banana yogurt (left from little daughter’s breakfast)
- 1/2 cup frozen blueberries

I headed to a nearby trail armed and ready. With good underwear and fantastical new earphones…
I LOVE these!! After much deliberation on what type of earbuds to buy, I decided on the Skullcandy Chops. They fit over the ear (but there is still room for sunglasses) and the speaker part sits flush against your ear. They are really comfortable and stay put. Unlike underwear
I did the Motiontraxx Jeff Galloway 30:30 interval workout again. I wanted to run longer today, so I played it twice. It was a nice run. I can feel my endurance building and found the 4.34 mile run to be pretty easy! Best of all, NO PAIN!
I was starving when I got home. I went right to the fridge and fixed a great snack: hard-boiled egg whites filled with guacamummus !
I love guacamummus. I think you’ve noticed.
However, there is a NEW guy in town…
Oh my greatness. This is the most amazing dip ever! It has a nice tomato flavor that would complement so many dishes. It would be FABULOUS on a burger! I see some grilling in my future.
I spread a heap of dip on a high fiber tortilla and added Applegate Farms Roasted Turkey , baby spinach and sliced tomato…
So good.
This star didn’t need backup, but I went nutty on the veggies anyway…
And more water. slosh, slosh.
But, woman cannot live with water alone. And can’t pass up a good deal! Starbucks is having a Happy Hour special until May 16th where all frappuccinos are half-price between 3-5 p.m. Yesterday, I missed it, but today, I was right on time…
I guzzled half my Coffee Light Frappuccino before taking the pic. I couldn’t help it
That held me over quite well until dinnertime. The family was having tacos and I followed the theme with a big taco salad…
And more water.
