Dessert All Day

Hi!!  Hope everyone had a nice weekend!  Little excitement here;  just relaxing with the family.

I did make it to my Weight Watchers meeting on Saturday.  It wasn’t my normal weigh-in day, but I couldn’t get there on Friday.  Boy, Saturday meetings are nutty!  I ended up leaving the meeting because it was standing room only.  I did weigh-in though and I’m down 1.8 lbs!  I’ll take it!  Any loss for me lately is a good loss.  It all adds up!

This morning, I had a run on the workout schedule.  I really didn’t want to go, but kicked my butt out of bed and went anyway.  I shuffled through 2.6 miles using 2:1 intervals on the GYMBOSS

And felt good!  I never regret resisting the temptation to ditch a workout!

Breakfast was a hearty, mock egg “McMuffin” – whole wheat english muffin, 1/2 cup egg whites, 1/3 cup crumbled turkey sausage (mixed with the eggs) and 2 % cheese (7 PP)…

Lunch was simple and quick – a heat up of Royal Asia Shrimp Wonton Soup with 4 Trader Joe’s Chicken Cilantro Mini Wontons added in (3 PP)…

Along with 2 oz. turkey, lettuce and wasabi mustard rolled in a small La Tortilla Factory Tortilla  (3 PP)…

The afternoon Green Smoothie just got a little more fun…

It’s not made with any old banana.  This one’s got Diana’s Bananas dark chocolate covered frozen banana in it!

  • 1 cup unsweetend vanilla Almond Breeze
  • big handful fresh spinach
  • 1 Diana’s Bananas dark chocolate covered banana, chopped

Dessert in a glass!  Sweet banana with chocolatey bits!  I counted this as 4 PP since the frozen bananas are calculated at 3 PP ( due to the chocolate coating).

The husband and daughters requested meatballs for dinner.  I’m not usually a fan of meatballs, but tonight they sounded good to me!

I topped mine with shredded light mozzarella cheese…

I served my meatballs with leftover mashed cauliflower, broccoli and a slice of Italian bread (12 PP) …

Lemon Drop Cookies
adapted from Healthy Cooking for People Who Don’t Have Time To Cook by Jeanne Jones

  • 1 egg
  • 1/3 cup sugar
  • 1 tsp. lemon zest
  • 1 tsp. pure lemon extract
  • 1/2 tsp. baking powder
  • 2/3 cup oat flour
  • 2 tbsp. powdered sugar + 1 tsp. water for glaze
  1. Preheat oven to 325 degrees.  Line a baking sheet with parchment paper.
  2. Place egg in medium bowl and whip until frothy.  Add the sugar and mix until completely dissolved.  Beat in lemon zest, extract and baking powder.  Slowly beat in flour until fully incorporated.
  3. Spoon batter by tablespoonful onto parchment lined baking sheet.  Bake about 10 minutes, or until cookies start to brown slightly.  Cool on sheet, then peel from parchment.
  4. Mix powdered sugar with 1 teaspoon water.  Drizzle over cooled cookies.

Makes 12 cookies.  2 PP per cookie.

How often do you eat dessert?  Since I’ve reduced the amount of added sugar in my diet, I try to limit it to a couple of times a week.  Hard to do if you have too many “goodies” around!

Me and Gymbob

Let’s talk about the bizarre shape of my head for a minute, shall we?  In an effort to contain my Bride of Frankenstein hair while running, I put on this headband (pardon the gray, it’s color time) …

But, headbands do not stay on my head because I have this bulbous top, but flat bottom.  They always slide up the back of my pancake head!

Ironically, the headband was called Stay Put, too.

Fail.

In other non-deformity related news, guess who’s my new running partner???…

My DAD!!!!

He’s always been an avid exerciser, but not really a runner.  Lately, he’s been hammering it out on the treadmill and told me he’s been running almost 3 miles in 30 minutes!  Holy Speed Demon! 

I told him he should do the upcoming 5K with me.  He was interested, but wanted to give running outdoors a whirl first.  So, he and I met this morning at my usual trail and set off doing 3:1 intervals.  He stuck with my pace the whole time, although I’m certain I was holding him back from going faster! 

We finished up at 2.45 miles….

Way to go, Dad!  I definitely see a 5K in his future :)

And he wants a “Gymbob” now!  I kept saying, “GYMBOSS, Dad, GYMBOSS.”  LOL!

Before meeting up with Dad, I had a fun breakfast thanks to this new find…

Pretzel BAGELS!  Who can resist that combo?!

I added the salt to make the bagel a “pretzel” and served it with a fried egg ( 5 PP)…

The bagels taste exactly like a soft pretzel.  This is a bad thing for me since I LOVE soft pretzels.  Luckily, the family likes them as well, so they should be gone soon.

For lunch, I brought back the salad kit .  In the mix…

  • romaine lettuce
  • 2 oz. leftover bbq chicken (from the weekend)
  • 1/4 cup black beans
  • 1/4 cup lite 3 cheese blend
  • 1/3 cup chopped carrots
  • 2 slices center cut bacon
  • 2 tbsp. Hidden Valley light ranch dressing

Afternoon snack – a deep Green Monster (1 PP)…

Dinner was a family favorite – Chicken Cutlets- along with the not so favorite sweet potatoes and broccoli rabe (13 PP)…

I roasted the sweet potato slices on a sheet pan like this…

then topped them with cheddar cheese and ran them under the broiler…

Do feet gross you out?  Only gross feet gross me out!  LOL!  Some people have really cute feet!  Wish I was one of them.  And yes, sometimes my own feet gross me out!  HA!
