Delays + Delicious Dinners

Another weather delay this morning due to sleet and snow!  Is it spring yet????

A little delay wasn’t going to stop me!  I headed to the gym for Triple Threat Tuesday!  My head was still in a bit of a fog, but I powered through for 20 minutes on the treadmill doing 1:1 intervals with the GYMBOSS, 20 minutes on the elliptical and 20 minutes on the Arc Trainer .  My legs were like jello when I finished!  I really needed a good workout!

Before the gym, I ate breakfast since I had time.  A simple yogurt bowl with 1 cup nonfat plain Chobani, 4 drops liquid vanilla NuStevia, banana and 1/2 cup blues…

My salad cravings are back, so lunch salad kit #2 this week was Chicken BLT

  • romaine lettuce
  • 4 oz. chicken breast (poached chicken really comes in handy!)
  • 2 slices center cut bacon
  • handful grape tomatoes
  • 2 tbsp. light Hidden Valley Ranch Dressing <— best light dressing!

A tasty 7 PP lunch…

I wasn’t very hungry for a snack this afternoon.  Clogged up sinuses seem to curb hunger.  Who knew?  icon_surprised

Sinuses or not, I was excited to dig into dinner!  Thanks again to my girl, Danica with the awesome dinner hook-up… Crockpot Pulled Pork and Healthy Asian Slaw

She made this a few days ago and I’ve been thinking of it ever since!  The pulled pork hails from Zesty Cooks and it was delicious on a toasted 3 PP bun topped with a little of Danica’s Asian Slaw (1 PP)…

The slaw is so fresh tasting.  I’ll definitely be making this again…

After this fab 9 PP dinner, I still had quite a few POINTS left for the day.  Perfect opportunity to break out the bread…

More weather delays on the horizon for tomorrow, so I may not be able to get to my WW meeting until Thursday.  I’m really itching to go since I couldn’t get there last week due to snow!  Is it spring yet???

On The Plan, Stan

Thank you all so much for sharing your thoughts on and experience with eating the Weekly POINTs Allowance!  For me, it will take some getting used to.  With the old program, I was never able to use more than 17 of my 35 WPA or I wouldn’t lose. 

This time around, I will plan on eating them when I need them for higher POINTsPlus meals, as I did this weekend for pizza.  But if I feel satisfied, I will let that be the best gauge.  It’s all about a change in mindset, making sure to not feel guilty when using the WPA since they are built into the program for using, and letting my satiety level be the lead indicator.  That’s my plan for the plan, Stan :)

And this morning the plan was to run!  The roads are still snow-covered and I’m klutzy enough as it is, so I opted for the treadmill.  The husband and I bought a new one as a Christmas gift to each other!  Running on the treadmill isn’t my first choice, but I was very thankful to have the option of using it rather than frigid outdoors.

My running has been lax lately.  I haven’t been very motivated to do it, but I forced myself to get on the treadmill and pumped out a slow 3 miler using 2:1 intervals on the GYMBOSS.  Get ‘er done.

When I got finished, breakfast was waiting!  I put together Danica’s Crockpot Steel Cut Oats last night with a couple of changes.  I swapped out peaches and blueberries for pineapple and mango that I’ve had forever in the freezer!  Also used coconut extract to add to the tropical feel.  Topped with 1 tsp. butter, a few drops of Liquid Vanilla NuStevia and a banana, this was a GREAT 5 PP breakfast…

And you know I don’t usually say that about oats!

After big daughter’s exciting basketball game, it was back home for lunch.  I was pretty hungry.  It’s the one thing about oats that bugs me.  It doesn’t usually hold me over very long!

I went with a quick lunch for 7 PP – hummus, persian cucumbers, red onion and lettuce on dark pumpernickel…

Along with a string cheese (for added protein) and a luscious pear…

Dinner was so delicious – a do-it-yourself taco bar!  I laid out all the fixings on the kitchen island and let the family put together their own tacos.  I decided to make mine into tostadas using 2 corn tortillas toasted in the toaster oven, then topped with 96% lean seasoned ground beef, REAL cheddar cheese, REAL sour cream (2 tbsp. is only 1 PP), salsa, guacamole and lettuce…

These were so good and so filling for only 10 PP…

And that’s with using full fat cheese and sour cream!  Boy, I love this program :)

A new community board called Friends for Weight Loss  has been set up by my lovely friend, Danica.  It’s a good resource and support group for those on the Weight Watchers Program.  Check it out!

The Mixing Bowl

Such craziness!!!!  Only 11 more days and everything is all jammed in this week!  I’m trying not to stress too much because stressing = cookies! 

So far today, there’s been no cookies.  Hope to ride that wave!

I have not been sleeping well.  My body isn’t used to all this sugar and it’s throwing off my sleep pattern,  making me wake up often through the night.  For that reason alone, I’m ready to ditch the cookies!  I like sleeping better :)

Despite feeling unrested, I was looking forward to a run this morning.  Until I opened the door!  It was 20 degrees out there!  GAH!  No thank you.  I decided to try out a fun new workout on Exercise TV  – Piloxing!

What the heck is Piloxing, right?  I wondered that, too…

All I can say is…. owwwwwwww.  Piloxing is code for set your quads on fire.  Brutal, but necessary.

Breakfast was sweet in a sugar-free way!

  • Chobani plain nonfat greek yogurt
  • 3 drops liquid vanilla NuStevia
  • blueberries
  • 1/2 banana
  • sprinkle of sliced almonds

Dinner was earlier than usual due to little daughter’s holiday dance rehearsal and basically eaten in a nanosecond!  I don’t like rushing to eat like that because I’m often left unsatisfied.  However, I didn’t want to wait until after rehearsal when starvation mode would hit!

Chicken fajitas (sliced chicken breast sauteed with onions, red and green peppers, seasoned with cumin, chili powder, garlic, s +p)  along with some carrots on the run…

And the craziness continues!  An all day field trip with little daughter, Christmas Pageant for religion class, big daughter’s school dance and parties!  A jam packed week!  All fun, right? 

No cookies stress. :)
