Chicken And The Sea

Such a gorgeous day!  I feel so much more energetic when the sun is shining!

A good breakfast gets me going, too…

Another Chocolate Oat Breakfast Cake, this time topped with PB2 (6 PP).  So filling, I almost couldn’t eat it all!

I brewed up press to-go (1 PP)…

And I was off to pick up my Dad for a run.  We headed to a nearby (hilly –ugh!) paved trail and cranked out 2.3 miles using 2:1 intervals on the GYMBOSS

Lunch was a GIANT flatbread pizza using Joseph’s Lavash Bread and Tyson Grilled and Ready Chicken Breast Fillets that I received as part of Foodbuzz’s Tastemaker Program

Generally, I’m not a fan of processed food like this, but it does come in handy for quick meals periodically!  Each chicken breast is 3 PP …

I decided to use it for a BBQ Chicken Flatbread Pizza

  • 1 whole Joseph’s Lavash Bread
  • 1/4 cup bbq sauce (*see below)
  • 1 Tyson Grilled and Ready Chicken Breast Fillet, diced
  • 2 oz. shredded lite mozzarella cheese
  • red onion slivers

Spread bbq sauce on flatbread.  Add toppings and bake in 400 degree oven for 10-15 minutes.

Definitely a keeper!  I was full up until dinner :)

We’ve been eating a whole lot of chicken lately, so I switched it up and made a shrimp dish for dinner…

Baked Shrimp with Zucchini and Feta

  • 1 lb. large shrimp, peeled and deveined
  • 1/2 cup chopped onion 
  • 2 tsp olive oil   
  • 1 garlic clove, minced
  • 2 medium zucchini, sliced
  • 14 oz. can diced tomatoes, drained
  • 1/4 cup fresh chopped basil
  • 1 Tbsp fresh lemon juice
  • s + p  
  • 1/2 cup crumbled reduced-fat feta cheese   

Heat oil in a large nonstick skillet.  Add onion and garlic;  cook until soft.  Add zucchini and cook about 5 minutes.  Add tomatoes, basil, lemon and shrimp.  Stir to combine.  Transfer mixture to a baking dish.  Sprinkle cheese over the top and bake in 425 degree oven for 20 minutes.

Makes 3 big servings.  Each serving is 7 PointsPlus.

Salad Alley

Happy weekend!!  I got to start my weekend off right with a lovely lunch. 

But first … breakfast!  Protein Pancakes with PB2 agave glaze (6 PP)…

Off to the gym for a workout!  I did a 25 minute stint on the Arc Trainer , then moved on to weights…

Another great workout!  I struggled a bit with the last couple of reps on the Overhead Press and Arm Curls.  My arms were still a little sore from Wednesday’s workout, so I held the reps and rested a second or two to squeak those last couple out!

After cleaning up, I set off to meet my friend, Rosemary, for lunch at Capers & Lemons Italian Restaurant

We sipped on unsweetened Peach Berry ice teas while looking at the menu…

Everything looked delicious!  There were some tough decisions to be made.  We decided to start by sharing the Fig Flatbread – flatbread topped with fig jam, prosciutto and gorgonzola cheese…

I nibbled on 2 small squares (est. 4 PP)  until I decided it was just okay.  I was looking for more of the fig jam taste to balance the stronger flavors of the gorgonzola and prosciutto.

After dodging the fantastic sounding sandwiches and pasta dishes on the menu, I settled on the Nicoise Tuna Salad

A mix of harticot vert, mixed greens, grape tomatoes, kalamata olives, a sprinkling of cubed potato and a soft boiled egg served with perfectly cooked medium-rare tuna.  I got the lemon vinaigrette on the side for “fork dipping”.  So tasty! (est.  9 PP)

I ended with a decaf cappuccino and a bite of almond cookie (2 PP)…

Later, I snacked on an apple and string cheese (1 PP)…

Dinner was another salad!  No Friday Night Pizza … crazy, right?!  Well, the family had pizza, of course.  Can’t get them to break out of the mold ;)

They missed out on this 9 PP creation…

  • Greek Turkey Burger

  • butter lettuce mix
  • 1 oz. light feta cheese
  • sprinkle of greek seasoning

My first week weigh-in (again!) is tomorrow.  Not sure what to expect since my body’s been acting wonky lately, but I’m keeping my fingers crossed!  I had a great, on-program week, regardless!  I’ll let you guys know how it went on Monday. :)

Do you eat raw fish ?  I can do salmon and medium-rare tuna.  I like some raw fish sushi as long as it’s in small bites and surrounded by rice!  Sashimi – no!

Sweet Sunday Eats

Such a lovely weekend!  I went to a fun tea party on Saturday and got to sleep in late and relax today!  Can’t ask for a better time than that :)

I started the day with a leisurely breakfast – Protein Pancakes  topped with PB2 agave glaze and a side of peppered turkey bacon (6 PP)…

The leisure continued with some blog reading and book reading, then it was time to make lunch.  I’ve been craving tuna salad for quite a while.  I had this crazy idea for tuna with a twist.  Instead of using mayo (which I happen to love, but I know a lot of people are grossed out by it!), I mixed it with GUACAMOLE!   I KNOW!!!

Tuna Guacamole Salad

  • 1 (6 oz.) can solid albacore tuna in water, drained
  • 1 celery stalk, finely diced
  • 2 tbsp. guacamole ( I used Wholly Guacamole)
  • s + p to taste

Makes one serving at 5 PointsPlus.

Served open faced on a TJ’s multigrain sandwich thin (these are only 2 PP!)…

Who knew tuna and guacamole would be such a match made in heaven?  Love it!

I put a stop to the lounging and headed out with the family for a walk in the park.  So nice to get some fresh air.  Spring seems to be on a slight delay.  Everything is still pretty brown and empty…

We walked around the park for about 2 hours before heading home for dinner.  The fresh air made us all hungry!

I was excited to grill up this new-to-me find…

Sausage and cheese – I’m in!  The stats are great, too at 3 PP per sausage…

These are fully cooked, so they just needed a quick stint on the grill.  Nice for an easy heat and eat dinner!  They taste delicious – love the little pockets of cheese…

I served mine with a side of my Light Slaw with Cranberries and Honey

Again, if you’re a mayo hater, this is a terrific slaw to make.  It’s light, sweet and goes with any barbeque dish!

Light Slaw with Cranberries and Honey

  • 16 oz package coleslaw mix (shredded cabbage and carrots)
  • 1/3 cup dried cranberries 
  • 1 green onion, sliced (green and light green parts only) 
  • 1 Tbsp olive oil   
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • 1 tsp salt  

In a large bowl, whisk together olive oil, vinegar, honey and salt.  Add coleslaw mix, green onions and cranberries to bowl with dressing.  Toss well.  Refrigerate for 1 hour before serving.

Makes 8 servings.  1 PointsPlus per serving.

Since I had quite a few Points left, dessert was in order!  Especially after seeing Lauren’s amazing Peanut Butter Chocolate Lava Cake For One!  The recipe called for peanut flour, so I thought it would be the perfect opportunity to use the Chocolate PB2 that I ordered a while back…

I cut back on the amount of sugar, only using 1 tablespoon and substituted the almond milk and unsweetened applesauce as offered in Lauren’s recipe.  The result was not as “lava” as the original, but more like a warm, gooey brownie!!! hearts_smiley

Topped with an extra drizzle of Chocolate PB2, this was a perfect 5 PP ending to a wonderful day!  Thanks for a fantastic recipe, Lauren!
