A Few New Faves
Thank you all so much for your supportive comments about my crappy doctor appointment yesterday. I don’t like being frustrated like that, but not every doc is fantastic and these situations happen sometimes. Kinda like kissing a few frogs before finding your prince
Today was a new day and I made sure to start it off right! Banana Stuffed Protein Pancakes coming up (5 PP)…

All dressed up and ready to eat…
These guys were extra fluffy and hearty from using toasted oat bran instead of regular oats…
I wasn’t sure if they would cook all the way through, but they turned out just fine! Love them!
After breakfast settled, I forced myself to do some yoga. I went with Exercise TV ‘s 10lb. Slimdown Yoga and really liked it. The poses were doable, challenging and the flow was great. I felt much better when I finished!
Lunch was a simple Turkey BLT wrap – 2 oz. turkey breast, center cut bacon, lettuce, tomato and light ranch tucked into a high fiber wrap (8 PP)…

Aw, that’s not right. Carrots have been there for me. I can’t just leave them high and dry!
New afternoon snack – carrots dipped in almond butter (2 PP). Trust me, it works!
Dinner was another favorite – Tostadas! Tonight’s mix…
- 2 corn tortillas, toasted
- 1/2 cup fat free refried beans
- shredded lettuce
- salsa
- 2 tbsp. guacamole
- 1 oz. cotija cheese
Two filling Tostadas for 9 PP…
With just enough room for a warm latte to end the night.

Celebrating Food And Recipes
Did you know today was National Pancake Day? It was also National Peanut Butter Lovers Day! Who knew there were so many food holidays?!
I decided to celebrate both with kicked up Protein Pancakes. A stack topped with 1/2 banana…
And drizzled with PB2 syrup!
The syrup was made by thinning out the PB2 with a little extra water then mixing in 1/2 tsp. agave…
This might have been the best pancake breakfast ever for 5 PP!

I was way too stuffed after breakfast to exercise. I did put on my sneakers though. It shows effort, right?
Lunch was a combo of two cravings I’ve been having – eggs and beans! Egg salad has been showing up ‘round the blogworld lately – both Danica and Biz sealed the deal for me with their egg salads this week! I also wanted to make a Chickpea Salad this week, so I just came up with a hybrid of both.
Egg Chickpea Salad was born!
- 10 oz. cooked chickpeas (a 14 oz. can, drained and rinsed)
- 4 large hardboiled eggs, chopped
- 2 stalks celery, diced
- 2 tbsp. onion, finely diced
- 2 tsp Dijon Mustard
- 1/4 cup reduced-calorie mayonnaise
- 1 Tbsp pickle relish
- 1 Tbsp fresh dill, chopped
- 1 Tbsp parsley
- s + p
- 1 –2 tsp. nonfat milk (optional)
Roughly chop chickpeas. (Remove skins prior to chopping, if desired *see below). In a large bowl, combine eggs, celery, onion, relish, dill, parsley, mustard and mayo. Thin out with milk, if necessary. Season with salt and pepper.
Makes 6 (1/2 cup) servings. Each serving is 4 PP.
The texture of chickpeas is really nice and creamy when the skins are removed. They slide off pretty easily when pinched between your fingers…
I know…get a job, lady.
The little splash of milk is also a good way to stretch the mayo and add creaminess without extra fat and calories!
Delicious in a high fiber pita with spinach (7 PP)…
Along with a sweet Cara Cara orange…
Afternoon snack was a homespun latte (3 PP)…
Then I got to work in the kitchen again for another blogger inspired meal! Tami posted about these Cheesy Quinoa Burgers and I couldn’t wait to make them! I followed her version of the recipe and they were fantastic! I served myself two burgers topped with guacamole and salsa along with roasted broccoli for 11 PP…

So glad I like coffee again
I like eggs a lot lately, too! Egg scrambles have been a good way to get some veggies in and a good protein start to the day. A little something special went in the mix today…
Only 3 PP for 2 patties…
I pan-fried them in cooking spray (not necessary since they are fully cooked, but I like them browned), then chopped them up, added egg whites, spinach and cheese.
Messy, but delicious 5 PP…
I was fueled up and ready to start my day…

After most of my brain cells deteriorated, I stopped for some lunch. A quick taco wrap using leftover taco seasoned ground beef, 1 oz. cotija cheese, lettuce, guacamole, fresh salsa rolled into a La Tortilla Factory tortilla (7 PP). Okay, maybe not “rolled”….
More like shoved until it busted out.

I knew I was really losing it when I started belting out Justin Beiber songs. It’s bad when you’ve resorted to the Beibs.
My blood sugar must have been sending me into delirious shock. Time for a snack (3 PP)…

In my next life, I’m coming back as Rocky.
Dinner was the usual pizza fanfare. As I said last week, I’m doing okay with ditching the take-out that the family eats and making my own. Pita Pizza is my new fave!
Served with a green salad tossed with olive oil and good balsamic vinegar. A great 8PP Friday night dinner…
With room for a little treat – another Single Lady Cupcake (this one I made with oat flour) topped with PB2 and sprinkles (4 PP) …
