Aaah, that’s better. Remember when I said that getting up extra early hasn’t made me a crankpot? Yeah. I take that back
I had an early shopping trip scheduled with Super Shopper Extraordinaire (aka Gram), so no working out this morning. I just headed straight to breakfast…
Weird, right? I deviated from the traditional breakfast and made a bagel topped with baby spinach, Applegate Farms Roasted Turkey and a slice of burn-your-retinas orange cheese. I must say, I love me some processed cheese. Except for Velveeta. I’m snobby that way.
This delicious breakfast did diddly in the holding-over-til-lunch department. About two hours into my travels with Super Shopper Extraordinaire, I was starving! Stomach-growling starving. The crankpot was unleashing…
Finally, I had to wrap it up with SSE so that I could get some eats! I headed home and got right to it. Another interesting concoction – and eggwhite wrap with Cholula, baby spinach aaaand you know I’m obsessed guacamummus!
It really does go with everything!

I had a few more chips later and some Kashi TLC crackers. grrrrr…
Then, made myself a refreshing smoothie for afternoon snack using 1 cup Almond Breeze, strawberries and some ice…
Honestly, it was kind of suckish. My strawberries were meh and not very sweet.
I tortured everyone for dinner with Veggie Egg Rolls and stir-fry veggies…
I do it because I love them

A Weekend Goal
Happy Monday! How did your weekend go? Things here were good in the ‘hood; lots of family time which is always fun :\
No really… it was.
I’ve been finding that weekends are getting a little wonky in the food department. I haven’t been whooping it up or anything, but there’s definitely more BLT’s (bites, licks and tastes) than I want to be doing. My goal for this month is to be consistent with my journaling, even throughout the weekend. I know that keeps me on track and more aware, so I need to continue that over the weekend!

Sunday was run day. I was nervous about the hip and hoping that it wouldn’t act up. I gave myself a pep talk while preparing my pre-run smoothie. I went tropical on this one with the addition of mango…
In the blender…
- 1/2 banana
- 1/2 cup mango chunks
- 1/2 cup unsweetened vanilla Almond Breeze
- 3 ice cubes
Smoothies have been working out great as pre-run fuel! It seems that lighter is better. It gives me just enough to keep me energized without weighing me down.
After chugging, I headed out to run. It was HOT! Whoa, when did summer get here?! I was super hesitant about the run, but everything seemed to be okay. I did some stretching and foam rolling (more to come on this nifty thing) before I left, so I was nice and warmed up. I kept with 10:1 intervals and finished with 3.8 schweaty miles.
Then, I headed to Trader Joe’s. I picked up some new finds. I was most excited about THIS…

Dinner was something that had the family jumping for joy – Pepperoni Bread (or stromboli)…
I was making a few for little daughter’s Communion party this coming weekend. I decided to keep one aside for dinner. They were doing the happy dance. They think I’m going soft on them. Hmph. I’ll have to torture them with fish and vegetables tomorrow
I joined in the fun, too …
I’ve got a busy week getting ready for little daughter’s big day, so I’m not sure how creative meals are going to be around here! I’ll do my best not to bore all of you!

High Five
Hi everyone! The weekends are flying by lately, aren’t they?! We had lots going on Friday and Saturday. And lots that involved food.
I have to say my eats were random on those days. On Friday, I was busy doing errands and helping my good friend get ready for her daughter’s party, so I never really sat down for a prepared meal. Saturday was the same. I had a light breakfast, then went to a Victorian Tea sponsored by a Christian school that my MIL supports. We go every year and it’s always such a nice time.
The school’s gym is transformed into a very frilly affair…
With a long table of various tea sandwiches and sweets…
I went for a few of the cucumber sandwiches, fruit, brownie and chocolate chip bites…
Pretty good, eh?
Sunday
I was happy to get back to my normal routine on Sunday! It was a run day, too, so even though I had plans for lounging around the house all day, I needed to get the run in first.
I whipped up a Blueberry Oat Smoothie to get me started…
- 1/2 cup frozen blueberries
- 1 cup unsweetened vanilla Almond Breeze
- 1/4 cup oats
- 2 drops liquid vanilla NuStevia
After that settled, I headed to the ancient treadmill in the basement. It was raining outside and I wasn’t quite up for trying out a “rain run.” I shudder just thinking about it!
I hit a new milestone – 5.1 miles! All the planets seemed to align for this run. The smoothie held me just right, my legs cooperated and I felt strong throughout the entire run. I stayed consistent with a 10:1 interval and it worked out great.
When lunch time rolled around I was ready! I made a sandwich using an Ezekiel hamburger bun stuffed with Applegate Farms Herbed Turkey Breast, baby spinach and dijonnaise…
I added a side of carrots, a Gala and a few Kashi TLC Country Cheddar Crackers…
and a few more CRACK……ers…..
Later in the afternoon, I got hungry again, so I had my favorite snack…
For dinner, I tried to use up the leftovers that were hanging out in the fridge. I turned leftover grilled salmon and zucchini into a delicious dish – Creamy Salmon and Spinach. Of course, the star ingredient…. again (told you I was obsessed)…
I sauteed fresh spinach in garlic until starting to wilt. I added the zucchini and salmon (flaked in small pieces) to warm through. To finish, I stirred in 3 tbsp. of raita and served it over whole wheat couscous…
It was seriously amazing! Leftovers never tasted so good!
